How to Make Edible Cookie Dough with Almond Flour & Coconut Flour
Whether you’re making an edible cookie dough recipe or freshly baked cookies, the traditional base ingredients are the same: refined flours, refined sugars, various fat sources like butter and/or eggs, and milk of some sort. Plus, any desired flavorings, mix-ins, etc.
Clearly, to transform the classic into a healthy edible cookie dough recipe, we’ve got to make some changes. But luckily, it doesn’t have to be too drastic or complicated! A few simple substitutions make for a vegan cookie dough recipe that’s surprisingly satisfying and deceivingly indulgent:
Healthy Edible Cookie Dough Ingredients & Substitutions
Almond Flour & Coconut Flour
Instead of refined flours, this grain free and gluten free edible cookie dough features almond flour and coconut flour as the base ingredients. The result is an equally fluffy and crave-able healthy cookie dough – that’s also lower carb, paleo friendly and more fuel-filled!
In terms of how to make edible cookie dough at home, the first step for this recipe is to combine the almond and coconut flour, along with a bit of salt. For the best texture, make sure to whisk those dry ingredients together first, before adding the remaining ingredients and mixing into a dough!
Melted Coconut Oil
To replace the traditional butter and/or eggs, this vegan edible cookie dough recipe uses melted coconut oil instead! A simple fat substitute that’s plant based and works just as well in this recipe—especially since we don’t need to bake this vegan cookie dough.
Keep in mind, you CAN bake this healthy edible cookie dough recipe if you want. But, for cookies that bake successfully, you will need to add an egg to the dough.
Coconut Sugar & Maple Syrup
Instead of the typical refined white sugar, this healthy edible cookie dough recipe is made with coconut sugar and maple syrup! Of course, these are still sources of sugar—i.e. they still affect blood sugar—but they’re natural, unrefined sugars with more nutritional value.
Make no mistake, this vegan edible cookie dough is still absolutely a treat, best enjoyed in moderation. But, our bodies are better equipped to digest (and can use at least some fuel) from treats made with unrefined sweeteners and natural ingredients.
Milk of Choice
If you’re looking for a vegan and dairy free edible cookie dough recipe, swapping out the milk is simple. I made this vegan edible cookie dough with almond milk, but you can use any non dairy milk that you prefer!
Flavorings & Mix Ins
For my healthy edible cookie dough base recipe, the only flavoring I’ve added is a bit of vanilla extract. Whether you’re making chocolate chip cookies or oatmeal raisin, it’s just a simple addition that contributes to the overall cookie-tastic flavor!
In terms of customizing this vegan edible cookie dough recipe, your flavoring and mix-in options are truly endless. Below, you’ll find the recipe for my gluten free edible cookie dough base, which you can make your own by adding whichever cookie mix-ins your heart desires!

Can You Bake Edible Cookie Dough into Cookies?
Naturally, if you’re making this healthy cookie dough you might wonder: can you bake edible cookie dough into cookies? Or is it just for munching? It’s a smart question!
In general, most vegan edible cookie dough recipes can’t be baked into cookies. You can try, of course, but your cookies might not turn out very tasty or will just remain doughy in texture. This is because the essential fats needed for baking—like eggs and butter—aren’t used in vegan recipes.
So, for this particular recipe, the answer to can you bake edible cookie dough into cookies is simple: YES—if you add an egg to the dough first. After preparing your healthy edible cookie dough recipe, simply mix an egg into the dough before refrigerating. It won’t be an eggless edible cookie dough anymore, but it will be a bake-able cookie dough!
Then, scoop the dough into balls, flatten into disc shapes, and add to a prepared baking sheet. Pop those into the oven at 350°F (180°C) for 10-12 minutes, and you’ve got warm, freshly baked cookies to enjoy! Keep in mind, this gluten free edible cookie dough is best enjoyed in its traditional form—as a DOUGH—but it can be baked if you get a hankering for warm cookies.

Yesssssss
🙂 we love gluten free eggless cookie dough too!
Hi, What could I replace the coconut flour with as I don’t have any. I have buckwheat and wholemeal spelt, would any of them work? Or can I just use more almond flour? Thanks!
Hello! We haven’t tried making this recipe without the coconut flour, so I can’t speak to how well the texture will turn out without it. If you’re willing to experiment to find out, you could try just using more almond flour to substitute for the coconut flour! Or, try blending up oats into oat flour.
Again, I can’t say for certain how these substitutions will affect the texture, but it might be just as tasty 🙂 Would love to know how it turns out if you give it a try!
Absolutely delicious! I have just made my five year old’s day by making the peanut butter pretzel flavour. It’s in the fridge setting right now! Thanks for bringing a bit of sweet joy into crazy times! Stay safe and happy
