Chocolate doesn’t HAVE to come with a hefty dose of added sugars. Instead of the sweetened milk chocolate like you’ll find in chocolate chips and candy bars, these keto double chocolate chip cookies get their scrumptious chocolaty flavor from the raw source: cocoa!
Unsweetened cocoa powder comes from the ground skins of cacao beans, which are used to make chocolate. Cocoa itself actually isn’t sweet at all—it’s bitter! But, it packs TONS of potent, chocolaty flavor into these keto double chocolate chip cookies, without the added sugars. Don’t worry though, these low carb cookies are far from bitter.
With a bit of low carb sweetener, keto chocolate can be just as sweet as traditional! In this keto double chocolate chip cookies recipe, I used a low carb powdered sweetener, which I got online. (But, it’s also easy and much cheaper to make stevia powdered sugar or powdered erythritol at home!)
A granulated low carb sweetener could also work, but I think using the powdered sweetener makes a difference. It lightens and fluffs up these keto double chocolate chip cookies, creating an irresistibly fudgy-yet-cakey texture!
Doubly Fudgy, Doubly Delicious, Keto DOUBLE Chocolate Chip Cookies
The sources of fat needed to fuel a keto diet are also some of THE most important baking ingredients! Eggs, butter, cream—these and other fat sources generally have a texture that’s thick, dense, viscous, or generally gooey in some way. And, that makes them key for adding texture, volume, and all-around lusciousness to baked goods!
In these keto double chocolate chip cookies, the eggs help keep the dough together and add a nice fluffiness after baking. But, the secret to the ultra-fudginess in this recipe is the main ingredient: almond butter! Its mild flavor works perfectly to complement the chocolate in these keto double chocolate chip cookies.
And, it tends to be naturally thicker than other natural nut butters (like peanut and cashew butter). So, that naturally-goopy goodness makes for denser, fudgier, creamier low carb cookies!
Plus, not only does almond butter pack around nine grams of satiating fat per tablespoon, but it also offers more protein AND more fiber than most nut butters. You get FIVE grams of protein in just one of these keto double chocolate chip cookie! Of course, you could use any nut butter or seed butter that you prefer.
Chip Options for Keto Double Chocolate Chip Cookies
Last but not least, don’t forget about your keto chocolate chips! (These are keto double chocolate chip cookies after all…) There are plenty of low carb chocolate chip options available to you, like dark chocolate chips, stevia-sweetened dark chocolate chips, or cacao nibs.
But, be sure look for a dark chocolate that’s at least 75% cacao or more for the fewest added sugars and most antioxidant benefits!
Keto Double Chocolate Chip Cookies
- 1¼ cup almond butter, or nut butter of choice
- 2 eggs
- ½ cup cocoa powder
- ½ cup powdered low-carb sweetener, to taste
- 1 tsp baking powder
- salt, if nut butter isn’t already salted
- ¼ cup dark chocolate chunks
- Preheat oven to 350°F (180°C).
- In a large mixing bowl, combine all ingredients (except chocolate chunks) and beat together with a hand mixer.
- Fold in chocolate chunks.
- Scoop out dough and transfer to a baking pan lined with parchment. (I used a regular 4-teaspoon cookie scoop to portion my cookies!)
- Bake 12-14 minutes.
- Remove from oven and transfer to baking rack. Allow to cool 15 minutes before serving and enjoying!
- Yields 20 keto double chocolate chip cookies.
