Homemade cinnamon rolls just got a whole lot easier—thanks to this no yeast cinnamon rolls recipe! These are fluffy, flaky, and perfectly satisfying pastries, but with no pesky yeast and no waiting for the dough to rise. Plus, this is such a fun treat to make from scratch and bake at home. I’ll show you how to make cinnamon rolls in under an hour!
Full disclosure, I’m no professional baker. But I am an avid cinnamon roll eater. I understand the importance of yeast and sugar, and the magic they bring to bread-y pastries. However, in my kitchen, simplicity and convenience are key, which is why I’m so excited for you to try this this scrumptious recipe that doesn’t have any yeast or sugar but is still entirely delicious!
At first, I was skeptical that cinnamon rolls without yeast could turn out tasting like the real deal. But, after some recipe testing and tweaking, these yeast-free treats turned out amazingly good – warm and soft inside, perfectly crisp around the edges, and with an irresistibly flaky, cakey bite. Drizzled with some DIY icing, they absolutely satisfy my cinnamon roll hankerings!
Cutting out the sugar in the dough and icing was also an experiment, but Truvia® Sweet Complete™ and Confectioners sweeteners made it an easy swap. They’re both cup-for-cup replacements for sugar (granulated and powdered, respectively) in recipes – talk about simplicity and convenience!
I love that this recipe is quick, so cinnamon rolls are ready to devour in under an hour. But, best of all, this recipe is just plain FUN! You get to make the dough by hand, roll it up into a log, and slice it into satisfying spirals, then slather your warm rolls in icing after baking. Trust me, after making a batch of these cinnamon rolls, you’ll want to come back for more!
No Yeast Cinnamon Rolls Ingredients
- All-purpose flour
- Baking powder
- Truvia® Sweet Complete™ All-Purpose Sweetener
- Butter
- Egg
- Milk of choice
- Cinnamon
- Salt
- Truvia® Confectioners Sweetener
- Vanilla (optional)
Substitution Notes
All-Purpose Flour
For the best, fluffiest texture in these pastries, all-purpose flour is definitely the way to go. I went with the real deal refined flour—that’s my food freedom! I haven’t tried making these cinnamon rolls with an alternative flour, but you’re welcome to experiment.
A whole wheat flour will mostly likely work well in lieu of all-purpose. If you want to use a gluten-free flour blend or oat flour, just know that the texture will be different, and you may need to make other adjustments to the recipe to make the dough work.
Baking Powder
Since we’re making these cinnamon rolls without yeast, the baking powder is essential to the recipe. Yeast is typically used to get the dough for cinnamon rolls to rise, but baking powder is an alternative leavening agent that lightens and softens the mixture without any wait time.
Granulated Sweetener
I love pastries made with the real-deal flour and butter, but I chose to lighten up the sugar content by using Truvia® Sweet Complete™ All-Purpose Sweetener. This is one of my favorite secret weapons—it’s a combination of stevia leaf extract, chicory root fiber and erythritol that can be used as a 1-to-1 replacement for granulated sugar and a great option for cinnamon rolls without yeast.
Butter
Similar to the flour, real butter is the best bet for this recipe! It’s key to giving these cinnamon rolls the fluffy, flaky texture and gooey filling that we all crave. Again, I haven’t tested any alternatives like coconut oil or otherwise, so I can’t speak to whether the dough would work with a replacement for the butter.
Egg
Initially, I tested this dough with only butter and no egg, and the result was fairly crumbly and not nearly as tasty. So, for the best results, use the egg! As always, you’re free to experiment with substitutions.
Milk of Choice
Personally, I used whole milk in this recipe, but any milk should work just fine—including non-dairy options!
Confectioners Sweetener
For my icing, I chose to skip the sugar for another source of sweetness: Truvia® Confectioners Sweetener! This is made from stevia and erythritol and serves as a substitute for powdered sugar (versus granulated like Sweet Complete™). And, I’ve gotta say, it makes for a perfect DIY icing!
How to Make Cinnamon Rolls without Yeast
You can find the full no yeast cinnamon rolls recipe below, but here I just wanted to offer a few tips that can help you before you get started.
Making the Dough
- When preparing the dough, it’s important to use softened butter—not melted butter or butter straight out of the fridge. Give it at least an hour or 2 to soften at room temperature!
- Once you’re forming the dough, be mindful and don’t overwork the dough! Since we’re making cinnamon rolls without yeast, we want to mix just enough to integrate without compromising the dough’s fluffiness.
Rolling, Slicing & Baking
- When rolling out the dough, don’t worry about making a perfect rectangle or getting the dough exactly ½-inch thick. Just do your best to roll it out as evenly as possible.
- Starting on the long edge of your dough rectangle, fold the dough over tightly to roll into a log. What’s most important is getting that first part rolled tightly!
- I recommend scoring the top of the dough log into 12 sections to help with slicing. Again, your cinnamon rolls don’t need to be perfect—this is just a helpful guideline!
DIY Cinnamon Roll Icing
- For the icing, start with less milk at first and add more as needed to get your desired texture. If it becomes too liquid-y, simply add more Truvia® Confectioners Sweetener to adjust.
- Finally, prep your icing near the end of your homemade cinnamon rolls bake time, so you can spread or drizzle it on while they’re warm! Just don’t prep the icing too far in advance, as it might harden the longer it sits out.

No Yeast Cinnamon Rolls Recipe
Ingredients
Dough
- 2 cups all-purpose flour
- 1 Tbsp baking powder
- 1 Tbsp Truvia® Sweet Complete™ All-Purpose Sweetener
- ½ tsp cinnamon
- ¾ tsp salt
- 4 Tbsp butter, softened
- 1 egg
- ⅔ cup milk
Filling
- ¼ cup Truvia® Sweet Complete™ All-Purpose Sweetener
- 2 tsp cinnamon
- 1 Tbsp butter, melted
Icing
- 1 cup Truvia® Confectioners Sweetener
- ½ tsp vanilla extract
- 2-3 Tbsp milk of choice
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13” baking dish. Set aside.
- Combine flour, baking powder, Truvia® Sweet Complete™, cinnamon, and salt.
- Work the softened butter into the flour using your hands until it’s crumbly but integrated evenly.
- Separately, whisk together milk and egg.
- Add the milk mixture to the flour mixture to form a dough, folding with a rubber spatula. Don’t overwork the dough.
- Roll the dough out onto a floured surface, forming a rectangle about 10×14” in size and ½” thick.
- Combine Truvia® Sweet Complete™ and cinnamon for filling.
- Brush melted butter on top of rolled out dough.
- Sprinkle the cinnamon sweetener mixture filling all over the dough.
- Starting on a long edge, roll up the dough tightly into a log.
- Cut the log of dough into 12 rolls and transfer each to the prepared baking dish.
- Brush any remaining butter on top of rolls, if desired.
- Bake 25-30 minutes until fluffy and lightly browned.
- Near the end of the bake time, whisk together the glaze ingredients. (Start with less milk and add more as needed to adjust the texture.)
- When the rolls are hot out of the oven, drizzle or spread the icing on top of the rolls.
- Serve and enjoy!

I tried these with whole wheat flour, and they turned out well. I was going to attach a picture, but it looks like I can’t. They’re more dry than a regular cinnamon roll, perhaps partly being whole wheat, but whole wheat yeast cinnamon rolls aren’t as dry. Or maybe flaky is a better word. Anyway, they do stay together very well, and as long as you have a moist topping, they are moist enough nd so good. I did my topping with butter, coconut sugar, cream, a very little bit of cornstarch, and vanilla, and did not skimp on covering them with it.
I used coconut sugar in place of the sweeteners given.

I have a gluten allergy. Can I use gluten-free flour? It’s 1:1 flour so I replace it in other
recipes, too. Do you think it’d be okay here?
Hello! Great question. I suspect that a gluten free 1-to-1 baking flour could work in this recipe. However, we haven’t tested the recipe with a gluten free flour yet, so I can’t say for certain how they’d turn out! It could prove tricky, making cinnamon rolls without yeast and with no gluten – but you could experiment to find out. I hope this helps 🙂

I didn’t even know you could make cinnamon rolls without yeast but dang are these good! Totally not a baker but they were easy enough that even I could make them and that’s saying something. I just used real sugar instead of the stevia stuff but they turned out great
