Yogurt isn’t just for dips, dressings, and parfaits anymore… Why not dollop some rich, tangy yogurt on toast for breakfast?! Satisfying like cream cheese, but even lighter and simpler to spread.

I start with a hearty, whole grain rye bread, toasted until perfectly crispy. Then, I like to spread on some plain whole milk yogurt, or you can use any yogurt you like. I like whole milk yogurt’s probiotic boost, and its rich protein and fat content makes this breakfast toast even more satiating and filling!

After the yogurt, I like to drizzle on a bit of honey to balance the tang of the yogurt, followed by sliced figs, fresh thyme, and sesame seeds. Sweet, savory, earthy, with a comforting fall-time feel—this fig toast is one of my faves!

This spinach egg toast is like the ultimate balanced breakfast toast idea. A flavorful helping of leafy greens, a protein-packed fried egg, and a dose of nutritious fats from the yogurt—all piled onto one tasty, whole grain toast! And, you can whip it up in just 5 minutes.

To start, get your bread of choice toasting while you saute spinach in a bit of sesame oil and salt. I use about 1 cup of spinach, but feel free to pack in as much as you’d like. It’ll all wilt down to nothing, in no-time!

With your bread toasted and spinach sauteed, you can start assembling your savory breakfast toast while your egg is frying in the pan. Or, feel free to top this egg toast with scrambled eggs, a poached egg, or whatever you prefer!

Spread yogurt onto the toast as your creamy base, then pile on that sesame sauteed spinach. Once your egg is fried or cooked to your liking, add it on top and garnish with some red pepper flakes and black sesame seeds. Personally, I just LOVE egg toast topped with a fried egg—my breakfast toast is always more delicious once it soaks up some of that yolky goodness!

  • 1 slice seeded bread
  • 2 Tbsp plain yogurt

Instructions 

  • To start, heat a bit of sesame oil in a pan and saute spinach until wilted.

Vegetarian Goat Cheese Sweet Potato Toast with Figs, Pomegranates & Pistachios

Ingredients

  • 1 sweet potato, cut into 3-4 toast slices
  • 3 Tbsp goat cheese spread
  • 2 figs, sliced
  • 2 Tbsp pomegranate arils
  • 2 Tbsp pistachios, chopped
  • 1 tsp fresh thyme, chopped

Instructions 

  • Slice sweet potato lengthwise into toasts (as many as you’d like to eat), ~½-inch thick.
  • (Be careful slicing your toasts, especially with firm sweet potatoes! I recommend using the tip of your knife to score your sweet potato all the way around, along the line you plan to cut first. And, it can help to microwave your sweet potato for 1-2 minutes to soften it up just a bit.)
  • Toast slices in your toaster or toaster oven, until starting to blister/brown and soft enough to cut with a knife. (If using a traditional toaster, you may need to run your slices through the toaster a few times to get them soft.)
  • Carefully remove slices from toaster. (I use wooden tongs!)
  • Spread on goat cheese and top with fig slices, pomegranate arils, chopped pistachios, and a sprinkle of fresh thyme.
  • Serve and enjoy!
