One-Pot Taco Quinoa

One-Pot Taco Quinoa

Cooking quinoa doesn’t have to be complicated! This one-pot recipe will make your dinner easy, convenient, and healthy. Completely vegan and gluten-free!

Ingredients

  • 2 tsp olive oil
  • 2 garlic cloves, minced
  • 1/2 cup chopped onion
  • 1 bell pepper, diced
  • 1 cup quinoa, uncooked
  • 1.5 cups broth
  • 1 can of black beans, drained and rinsed
  • 1 can of tomatoes
  • 1 can of corn
  • 1.5 tsp chili powder
  • 1/2 tsp cumin
  • 3/4 tsp salt
  • 1/8 tsp pepper

Procedure

    • In a pot over medium heat, sauté onions, garlic and bell peppers in a bit of olive oil.
  • Add quinoa, beans, tomatoes, corn, chili powder, cumin, salt and water.
  • Bring to a boil. Turn down to a simmer, cover, and allow to cook until quinoa is cooked through, around 20 minutes.
  • Serve and garnish with avocado, lime juice, cilantro, or cheese.
