Garlic Chicken Rice Bowl

Too busy to cook dinner? Grocery shopping on a budget? Here’s a delicious meal that you can prep ahead of time, and it won’t break the bank! You can easily substitute ground chicken for any other protein, like turkey or beef – or, omit the meat completely and substitute with tofu for a vegetarian or vegan dish!


  • 1/2 pound (LB) Brown rice (1.25 cups uncooked)
  • 3 cups Cooked chickpeas (or other beans – two 15 oz cans)
  • 1/2 cup Fresh parsley chopped
  • 1 pound (LB) Frozen broccoli
  • 6 – 10 oz Frozen spinach
  • 1 head of Garlic
  • 1 pound (LB) Ground chicken, or protein of choice (turkey, beef, or tofu)
  • 1 tsp Olive oil
  • 1/2 Onion chopped
  • 1/4 tsp Pepper
  • 1/2 tsp Salt
  • 2.25 cups Water
  • Procedure

  • Sauté onions and garlic in olive oil for a few minutes until translucent.
  • Add ground meat and cook 8-10 minutes, until cooked through.
  • Add seasoning, rice, broccoli, spinach, and water.
  • Bring to a boil. Turn down to a simmer and cook 20-30 minutes, stirring 1-2 times. Cook until water is absorbed.
  • Stir in chickpeas and parsley, and season to taste.
  • Enjoy!
