Savory Garlic Chicken Rice Bowl with TONS of Veggies – Easy Meal Prep Dinner!

And, you can easily substitute ground chicken for any other protein, like turkey or beef. Or, omit the meat completely and substitute with tofu for a vegetarian or vegan dish!
Personally, garlic is one of my favorite foods. I love using it to flavor dishes, and I also love just roasting garlic and eating it! So, be warned, I am extremely liberal with the garlic in this recipe… But, if you aren’t as much of a fanatic as I am, go ahead and adjust to taste.

Sautéing up the garlic and onions in oil first will give the dish its flavor base. Then, add the meat and cook through completely (especially if using poultry).

In the past few years, the idea that serving something in a bowl means we can call it a “bowl” became a thing. And I’m totally okay with this. I think most foods should be served in bowls! And, I’m especially happy with a huge pile of food that’s all mixed together that I don’t have to think about.
That’s the essence of this garlic chicken rice bowl! A combination of flavors and foods that pair well, and provide enough textural difference that it doesn’t matter that they’re mixed.
Plus, I love that bowls make it easier to consume veggies. Because, I don’t know about you, but eating vegetables plain or on the side just requires more effort and intention for me. Don’t get me wrong, I’m all about finding that healthy relationship with veggies. But, there’s nothing wrong with wanting to sneak them in where you can, too! Cue: bowls galore.
1 tsp oil ½ onion, chopped 1 head of garlic, peeled & minced 1 lb ground chicken, or protein of choice (turkey, beef, or tofu) ½ tsp salt ¼ tsp pepper 1¼ cups (½ lb) brown rice, uncooked 1 lb frozen broccoli 6–10 oz frozen spinach 2 ¼ cups water 3 cups (2 cans, 15 oz ea.) cooked chickpeas (or beans of choice) ½ cup fresh parsley, chopped
Sauté onions and garlic in oil for a few minutes until translucent.
Add ground meat and cook 8-10 minutes, until cooked through.
Add seasoning, rice, broccoli, spinach, and water.
Bring to a boil. Turn down to a simmer and cook 20-30 minutes, stirring 1-2 times. Cook until water is absorbed.
Stir in chickpeas and parsley, and season to taste.
