Turmeric No Bake Energy Bites –Vegan Low Carb Energy Bites!

And, you only need a few main ingredients to make them: cashews, unsweetened coconut shreds, and a bit of maple syrup to hold the mixture together.
Then, just blend them on up with some simple spices and flavorings for a healthy vegan snack that’s ready in minutes! They’re sweet, chewy, and SO easy to make. Plus, you get a nice flavor kick from the ginger and turmeric, and it’s perfectly balanced with the tangy citrus.

The naturally vibrant, golden color of these no bake snack bites comes from the turmeric, a tasty spice that’s native to India and Southeast Asia. And, it’s SO trendy lately, so you’ve probably seen the name buzzing around the internet.
That’s because turmeric contains curcumin, a free-radical fighting antioxidant and one of THE MOST powerful anti-inflammatory compounds in the world! Some research studies examining curcumin have found that it can reduce inflammatory markers in the body and even help relieve symptoms of rheumatoid arthritis.

Turmeric No Bake Energy Bites
Ingredients
- 1½ cups coconut shreds
- 1 cup raw cashews
- 3 Tbsp maple syrup
- 1 Tbsp turmeric
- 1 tsp ground ginger
- 2 tsp lemon juice
- 1 tsp lemon zest
- 1 tsp cinnamon
- ½ tsp salt
Instructions
- Add coconut shreds to a food processor and blend until it gets oily.
- Add remaining ingredients and blend until cashews are broken into a meal.
- Press mixture into balls with hands. The dough won’t roll—it’s best to press it together. I used a 2-teaspoon cookie scoop to portion my snack bites!
- Let set in the fridge for a few hours.
- Yields ~30 turmeric no bake energy bites.

I am truly in love with this recipe. I take turmeric supplements but I like to fit some into my diet as well. So convenient to have these cute little energy bites to snack on! They’re filling but also really tasty, love that there’s ginger in here. Thanks for the easy recipe
