Smoked Salmon Summer Rolls – Creative Summer Roll Fillings!
I LOVE a lox bagel—but I don’t always want all of the refined carbs. Instead, try these lox supreme smoked salmon summer rolls! Basically, I’ve taken all of the classic lox bagel ingredients and rolled them up into a fresh summer snack. Or, a simple on-the-go lunch!
And, since summer rolls are wrapped in rice paper wraps, they’re far lower in carbs than traditional sandwiches and wraps. (Especially bagels!) I still get to enjoy the yumminess and wholesome omega-3s from the salmon, but I don’t have to worry about the refined grains.
Plus, there’s NO cooking involved in making these smoked salmon summer rolls. Simply layer your ingredients onto your rice paper sheets and roll ‘em on up! Then, serve with a simple, lightened-up cream cheese dip for the authentic bagel-like experience.
Personally, I like to coat my smoked salmon summer rolls in some ‘Everything But the Bagel’ seasoning, which I get from Trader Joe’s. But, it’s really just a blend of sesame seeds, poppy seeds, and other goodies you’d find on an everything bagel. Feel free to make your own seed blend!
Lox Supreme Smoked Salmon Summer Rolls
Ingredients
Smoked Salmon Summer Rolls:
- 12 oz lox
- 2 Roma tomatoes, sliced
- 3 mini cucumbers, cut into quarters lengthwise (long strips)
- ½ red onion, thinly sliced
- 3-4 Tbsp capers
- 1 Tbsp dill, chopped
- 6 sheets rice paper
- Trader Joe’s ‘Everything But the Bagel’ seasoning, or sesame seeds, for rolling
Cream Cheese Dip:
- ½ cup cream cheese, softened
- ⅓ cup Greek yogurt
- 1 lemon, juiced
- 1 Tbsp chopped dill
Instructions
- Fill a pot with warm water. Submerge your spring roll wrapper into the water.
- Remove wrapper from water and place on a flat, dry surface. Layer on in your filling ingredients. (I used about 2 oz lox, 2 Roma tomato slices, 2 cucumber strips, a few red onion slices, 1-2 tsp capers, and ~½ tsp chopped dill per roll.)
- Fold in the ends of your wrapper, then roll it up snugly.
- Roll in Trader Joe’s Everything seasoning to coat.
- In a large mixing bowl, combine cream cheese dip ingredients.
- Serve roll with cream cheese dip and enjoy!
- Yields ~6 smoked salmon summer rolls.
