Cookie Flavored No Bake Energy Balls – Easy Vegan Snack!
Pack some quick, wholesome fuel into your day with these 2-ingredient cookie flavored no bake energy balls! Honestly, healthy snacks can’t get much easier (or more delicious) than this. Just TWO simple ingredients: prunes and coconut flour. And, you don’t even have to turn on the oven?!
Yeah, that’s my kinda snack.
But, I Don’t Like Prunes…
Okay, I know some people may not be fans of prunes. But, have you tried them? They’re delicious! And, they’re the perfect natural sweetener for these no bake energy balls. In case you don’t know or have steered clear of them, prunes are just dried plums.
So, they’re full of concentrated natural sugars—keeping these no bake energy balls clean and sweetener-free! Plus, those simple carbs provide a nice energy boost. Of course, prunes are also notorious for their rich fiber content, which aids in digestion. But, it also makes this healthy vegan snack more filling and satisfying!
For these no bake energy balls, you’ll need prune paste. And, it’s super simple to make—just blend your prunes with some water. Then, you’ve got a sticky, naturally sweet paste to hold your no bake energy balls together! Bonus: you can also use prune paste in other healthy baking recipes, similar to applesauce.
Cookie-tastic Coconut Flour
Finally, the key to cookie-fying these no bake energy balls: coconut flour. Basically, dried coconut meat blended into a soft, fluffy flour. Usually, I turn to coconut flour for low carb baked goods as an alternative to grain based flours. But, it works just as well in all kinds of recipes—low carb or not.
Combined with sweet prunes in these no bake energy balls, coconut flour helps to create the texture and flavor of an ACTUAL cookie! And, that’s even without baking these goodies, all thanks to that coco-nutty fluffiness. Plus, coconut adds a dose of satiating fat and even more fiber to this recipe.
Altogether, just 5 of these no bake energy balls contain 6 grams of fiber! Two ingredients, no baking, AND fiber filled?? Without a doubt, this healthy snack recipe is a must-try!

Cookie No Bake Energy Balls
Ingredients
Prune Paste:
- 1 cup prunes
- ⅔ cup water
No Bake Energy Balls:
- 1 cup prune paste
- ⅔ cup coconut flour
- pinch of salt, optional
- vanilla, optional
Instructions
- To make your prune puree, add 1 cup of prunes and ⅔ cup water to a food processor or blender. Blend until smooth and free of chunks.
- Add vanilla and salt to mixture. Add coconut flour a little bit at a time, blending as you go, until you have a thick dough. You may need to scrape down the sides of your food processor!
- Once dough mixture is formed and free of chunks, roll into balls with your hands. (I used a 2-teaspoon cookie scoop to portion my balls!)
- Enjoy immediately or refrigerate in an airtight container for up to 1 week!
- Yields ~30 no bake energy balls.
