Ingredients

Prune Paste:

  • 1 cup prunes
  • cup water

No Bake Energy Balls:

  • 1 cup prune paste
  • cup coconut flour
  • pinch of salt optional
  • vanilla optional

Instructions

  • To make your prune puree, add 1 cup of prunes and ⅔ cup water to a food processor or blender. Blend until smooth and free of chunks.
  • Add vanilla and salt to mixture. Add coconut flour a little bit at a time, blending as you go, until you have a thick dough. You may need to scrape down the sides of your food processor!
  • Once dough mixture is formed and free of chunks, roll into balls with your hands. (I used a 2-teaspoon cookie scoop to portion my balls!)
  • Enjoy immediately or refrigerate in an airtight container for up to 1 week!
  • Yields ~30 no bake energy balls.
