To make your prune puree, add 1 cup of prunes and ⅔ cup water to a food processor or blender. Blend until smooth and free of chunks.
Add vanilla and salt to mixture. Add coconut flour a little bit at a time, blending as you go, until you have a thick dough. You may need to scrape down the sides of your food processor!
Once dough mixture is formed and free of chunks, roll into balls with your hands. (I used a 2-teaspoon cookie scoop to portion my balls!)
Enjoy immediately or refrigerate in an airtight container for up to 1 week!
