Mediterranean Parsley Salad with Tomatoes, Onion, & Olives

If you’re not a fan of leafy greens, try this Mediterranean parsley salad for light, fresh, and fragrant twist! Parsley’s bright aroma and earthy taste pair perfectly with the sweet, tangy tomatoes and salty olives. Of course, feel free to jazz this recipe up with your favorite veggies and seasonings!

The Power of Parsley

While a parsley salad isn’t the most common, it’s just the fragrant, herby addition we need in this Mediterranean salad. Plus, even though it’s ‘just an herb,’ parsley is surprisingly rich in nutrients like other leafy greens!

It’s a quality source of immune-boosting vitamin C, as well as vitamin A for eye health. Plus, parsley even contains some of the elusive essential mineral iron, which helps transport oxygen to our blood cells.

In just one serving of this Mediterranean parsley salad, you get 5% of your daily recommended amount of iron, 25% of your vitamin A, and one-third of your daily recommended amount of vitamin C!

Vegan Hummus Bowl, Anyone?

Personally, I like to use this Mediterranean parsley salad as part of a vegan hummus bowl. Layered right on top of the hummus dollop at the bottom of my bowl, I can scoop up some creamy chickpea goodness with every fragrant bite!

Mediterranean Parsley Salad

Mediterranean Parsley Salad

Ingredients

½ cup parsley, roughly chopped
2-3 Tbsp red onion, chopped
½ cup cherry tomatoes, halved
2-3 Tbsp Kalamata olives, sliced
1 lemon, juiced
pinch of salt
drizzle of extra-virgin olive oil

Optional Topping:
sliced avocado

Instructions

  • In a large mixing bowl, combine all ingredients and toss to coat.
  • Top with sliced avocado (if desired) serve, and enjoy!
  • Yields 2 servings Mediterranean parsley salad.
