I’ll show you how to make healthy steak tacos that are elegant yet easy—in under 45 minutes!

Clearly, these flat iron steak tacos are not your average recipe. Rather than going a more traditional, Mexican, carne asada-style route, I wanted to make tacos that were like enjoying a fancy steak dinner in every bite.

Hence: tender steak that’s cooked to perfection, served with blue cheese and sauteed mushrooms and onions!

Not only are they comforting and satisfying, but they’re loaded with flavor. Salty, umami goodness from the steak, a creamy, strong bite from the blue cheese, and a buttery, herbaceous kick from the sauteed veggies that tastes like Thanksgiving.

If you’re not comfortable or familiar with cooking steak, I’ll show you how to cook flat iron steak in the simplest way possible. (I promise, it’s easier than you might think!) And, I’ll show how to slice it so your healthy steak tacos have the best possible bite. The result is a quick, 4-person meal that’s unmi-STEAK-ably good!

Flat Iron Steak Tacos Ingredients

  • Small yellow corn tortillas
  • Cooked & sliced steak
  • Whipped blue cheese
  • Sauteed mushrooms and onions
  • Chopped cilantro

Healthy Steak Tacos Fillings

Before cooking your steaks, I recommend starting with sauteeing your vegetables. Personally, I like to melt butter in a pan but you can also use oil, then add in the sliced mushrooms, onions, and salt.

Allow that to cook for about 10-15 minutes, stirring frequently and covering the pan to help the vegetables soften. Near the end of cooking, I also like to add some black pepper and fresh herbs!

But, while the vegetables are cooking, feel free to start cooking your flat iron steaks! (See process for cooking & slicing below.)

The final component of these flat iron steak tacos will be the whipped blue cheese spread. To prepare, simply pulse together blue cheese crumbles and whipped cream cheese in a food processor, until creamy. It should only take 1-2 minutes! Once it’s spreadable, you’re ready to assemble your tacos.

When I made this recipe, I used small yellow corn tortillas, added a dab of the whipped blue cheese, then layered in some sliced steak, and finished with the sauteed veggies and a cilantro garnish.

Of course, you’re welcome to make your healthy steak tacos with any tortillas you prefer! Soft flour will work just as well, or try lettuce wraps, jicama shells, or even egg wrapswhatever you enjoy and suits your lifestyle.

How to Cook Flat Iron Steak

Naturally, the most important component of our flat iron steak tacos is going to be the steak. Different cuts of steak will cook a bit differently, so just keep in mind that I’m talking about flat iron steaks throughout this process.

To start, cut your 12oz of steak into 2-4 pieces as needed—smaller pieces will need less time to cook. Then, be sure to season them with salt on both sides.

Heat a large, flat pan over medium-high heat, then add butter to melt or your oil of choice. Once heated, add each piece of steak to the pain and allow them to cook for 5-6 minutes undisturbed, without moving them around.

Next, flip each piece, season with a dash of pepper, and continue to cook for anywhere from 2-10 minutes.

The exact amount of time will vary depending on the thickness of your steaks, the heat of your pan, and your desired level of doneness. (I.e., shorter time for medium-rare, longer time for well-done.)

I like a little pink in my steaks (medium), so an additional 5-6 minutes worked well for me! For more well-done, you may want to continue cooking for 8-10 minutes. Once cooked to your liking, remove from the pan, finish with a squeeze of lemon juice, and allow to rest 5 minutes before slicing.

How to Slice Steak for Tacos

Generally, slicing against the grain is the best option for slicing steak—particularly for flat iron steak tacos like these. By slicing in this way, you break down the meat fibers so they’re more tender, which makes them easier to bite and chew in your tacos.

So, look at your cooked piece of meat, and look for the pattern of lines (a.k.a. ‘the grain’) running across the meat. It’s best to look at the top and all sides of the meat to get a sense of the direction of the grain!

Once you can see the general direction, grab your knife and slice diagonally across the grain, slicing the meat into strips. Continue to slice each piece of meat in this way.

If, after slicing one of your steaks, you notice it’s pinker than you’d like it to be, that’s fine! Simply pause, reheat your pan, and toss the steak back on for another few minutes. Then, allow it to rest once more before slicing into strips. Once sliced, assemble your healthy steak tacos and devour!

Flat Iron Steak Tacos Recipe

Comforting, flavorful, healthy steak tacos with sliced flat iron steak, whipped blue cheese, and sauteed mushrooms & onions.

Flat Iron Steak

  • 1 Tbsp butter or oil
  • 12 oz flat iron steak, cut into 2-4 pieces
  • ½ tsp salt, to taste
  • ¼ tsp black pepper
  • squeeze of fresh lemon

Sauteed Mushrooms & Onions

  • 1-2 Tbsp butter, or oil
  • 8 oz sliced mushrooms
  • 1 sweet onion, thinly sliced
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ tsp fresh thyme, or rosemary, parsley, etc.

Whipped Blue Cheese

  • 4 oz whipped cream cheese
  • 4 oz blue cheese

Taco Assembly

  • 12 small yellow corn tortillas
  • 12 oz cooked & sliced steak
  • whipped blue cheese
  • sauteed mushrooms and onions
  • chopped cilantro, for topping


To Saute Mushrooms & Onions:

  • Heat butter or oil in a pan over medium heat.
  • Add mushrooms, onions, and salt. Cook about 10-15 minutes, stirring frequently. (I prefer to cover this as it cooks to help the mushrooms reduce & onions soften. Feel free to start cooking steaks while veggies are softening!)
  • Once tender, stir in black pepper and herbs of choice.

To Cook Flat Iron Steaks:

  • Season steak on both sides with salt, to taste. (You can leave steaks out of the fridge up to 15 minutes before cooking them.)
  • Heat a flat pan over medium-high heat. Add butter to melt (or oil), then add steaks and cook for 5-6 minutes on one side. (Leave it alone and let it cook—don’t move it!)
  • Flip, season with black pepper, and cook another 2-10 minutes—depending on heat of pan, thickness of steak, and your doneness preference.
  • Remove from heat and allow to rest 5 minutes.
  • Slice diagonally into strips, cutting across the grain. (Slicing in this way breaks down the meat fibers and results in a more tender bite.)
  • Finish with a squeeze of citrus.

Whipped Blue Cheese:

  • Pulse together in a food processor until creamy.

Taco Assembly:

  • Assemble tacos by spreading whipped blue cheese onto tortillas, layer on sliced steak and sauteed mushrooms, and finish with chopped cilantro.
  • Optional: serve in taco stand for fun presentation flair!
