Keto Biscuit in a Mug + Keto Breakfast Sandwich Recipe
This fluffy, 4 ingredient keto biscuit is so quick and easy—you can make it in the microwave! I’ll show you how to make a microwave keto mug biscuit PLUS one of my simple keto biscuit breakfast sandwich ideas.
All you’ll need is butter, an egg, coconut flour, and some baking powder, mixed together in a mug, microwaved for 90 seconds. That’s it! Simple as that, you’ve got an unbelievably fluffy, comforting keto biscuit ready to slice and serve warm.
Of course, you can probably find low carb and keto biscuit options at some grocery stores if you’d prefer. But let’s be real, this recipe is SO easy, you may have all of the ingredients at home already, and there’s only 1g net carbs per biscuit. Seriously, I was amazed by how tasty this microwave keto mug biscuit turned out, and I love that I don’t need to fuss with the oven or make an entire batch of biscuits.

Keto Mug Biscuit Ingredients
1 Tbsp butter
1 egg
1 Tbsp coconut flour
¼ tsp baking powder
Ingredient Notes
This recipe is pretty straightforward! The main thing to keep in mind is DON’T just toss all of these ingredients into the mug at once and then microwave. You’ll need to melt the butter in the mug first, then whisk in the remaining ingredients and cook.
For those with questions about ingredient substitutions, I haven’t personally tried this recipe with any alterations yet! So, I can’t say for sure how any specific substitutions would work out. You’re welcome to experiment with your own ideas if you’d like. (And I’d love if you left a comment at the bottom of the post to share how it goes!)
How to Make Microwave Keto Biscuit in a Mug
First, find a large microwave-safe mug. Think about the size you want your keto biscuit breakfast sandwich to be, because your biscuit will turn out just slightly smaller in size than the base of your mug. Then, add a tablespoon of butter to the mug and microwave until it’s melted. (May take ~30 seconds, depending how cold your butter is.)
Once melted, whisk in the remaining microwave keto biscuit ingredients: an egg, coconut flour, and baking powder. After everything’s integrated, pop the mug back into the microwave for 90 seconds. (This cook time is based on my 1100-watt microwave—timing may vary depending on your machine.)
Finally, allow that cooked keto mug biscuit to cool slightly before turning over the mug, removing the biscuit, and slicing into two rounds! Admire the magic of that fluffy, bread-y texture, and you’re ready to assemble the low carb breakfast sandwich of your dreams.
Easy Keto Biscuit Breakfast Sandwich
1 keto biscuit (see above)
1-2 slices bacon, cooked
1 egg, scrambled into egg patty
1 slice cheddar cheese
½ avocado, sliced
dash of sriracha
Low Carb Breakfast Sandwich Assembly
For those who want some sandwich inspiration, try this bacon egg and cheese + avocado combo. First, start by cooking up 1 or 2 slices of bacon to your desired crispiness. Once they’re ready, set aside on paper towels, but keep some of the bacon fat in that pan to give your egg some extra flavor (and fat)!
Next, whip up a fried egg, or try this hack for a perfect-sized, perfectly round scrambled egg patty! Spray your pan as well as the round outer band of a wide-mouth mason jar lid with cooking spray. Whisk your eggs together in a measuring cup, place the sprayed lid upside down in the pan to form a well, and pour the whisked eggs into it. Cover the pan and allow to cook until egg patty begins to set, then flip the patty and carefully remove the mason jar lid.
If you want to add cheese, now’s the time! Place a slice of your favorite cheese on top of the warm egg patty, cover to help it melt, and remove from the heat. Now you can load up your microwave keto biscuit with all of your cooked sandwich components, along with some sliced avocado, a dash of sriracha, or any toppings you like!

- Prepare keto mug biscuit and allow to cool before slicing. (See recipe above, or use a store-bought biscuit if preferred.)
- Cook bacon as desired and set aside to drain on paper towels. Reserve some of bacon fat in pan to cook egg patty.
- To prepare scrambled egg patty, whisk eggs in a measuring cup. Spray a pan with cooking spray, as well as the outer band of wide-mouth mason jar lid. Place lid upside-down in pan and pour in whisked egg. Cover pan and allow egg to set, then flip and carefully remove mason jar lid. (Use another spatula to help if needed!)
- Place cheese slice on top of warm egg patty, cover pan, and allow to melt.
- Assemble breakfast sandwich with microwave keto biscuit, egg, cheese, bacon, avocado, and a dash of sriracha. (Or whichever toppings you like!)

I never comment on recipes, but wow, this one was a game changer. It is so simple, and so, so good. I have Celiac, so I used a cream of tartar and baking soda substitute for the baking powder (out of habit).
This recipe was much fluffier than I expected, and tasted “bready” instead of eggy. Thank you for posting it!

Tastes like a biscuit just keto. I use dairy free margarine and it works great. Everything but the bagel seasoning is a fantastic addition as is Parmesan cheese.

I love this idea for my husbands on the go breakfast before work!! I work from home and am always looking for quick meal ideas for him in the morning. The only question I have, since he isn’t keto like I am…can I sub the coconut flour for any other flour just out of conveniency? We always have chickpea and white. But scarcely coconut because I’m the only keto one in the house and never use it.

Truthfully, we haven’t tested this microwave keto biscuit recipe with a different flour like chickpea or all-purpose flour, so I can’t speak to how exactly that would turn out. I suspect that it could work just fine, although it might require a bit of experimenting to get it right!
Just keep in mind, coconut flour is much denser than most other flours. So, if you want to use chickpea or white/all-purpose flour instead, I’d use 3-4 times more flour than this recipe calls for. (I.e., substitute for 1 Tbsp coconut flour with 3-4 Tbsp all-purpose or white flour.) If you do end up trying out this microwave mug biscuit with a different flour, we’d love to hear how it turns out for you! 🙂
this is the best and easiest recipe EVER! I used egg whites and olive oil and it turned out great. I have also added 1/2 tsp. of stevia before to make it a little sweet. I have
also added stevia and chocolate powder to give a different twist. Great recipe to
have on hand for quick & easy breakfast/snack.

Hi Davina, unfortunately this was designed as a microwave mug recipe and we haven’t tried making it in any other way, so I can’t speak to other cooking methods. I wish I could be more helpful, my apologies!
