Looking for a new way to fit veggies into your diet? Give GRILLED zucchini a go! Simply slice up a zucchini length-wise, marinate it in a simple garlic dill sauce, and toss it onto a Panini press! You’ll get beautiful grill lines and seal in all of those delicious flavors.
I know, grilled zucchini may sound a bit strange… But, trust me—it’s a deliciously flavorful and EASY way to prepare zucchini. And, you get to enjoy a familiar vegetable in a new and interesting way! That variety in our meals is crucial if we want to stay on track with eating healthily.
And, once you’ve prepared your grilled zucchini and allowed it to cool, you can even package it up as part of a freezer meal!

Personally, I’ve roasted zucchini, used it in sauteed dishes, and even spiralized it into veggie noodles! But, even when I roast or sautee until it’s perfectly tender, it isn’t always so flavorful. Which, makes sense, considering zucchini is around 95% water…
Similar to cucumber, zucchini is an extremely hydrating food that’s low in calories. But, it’s also very nutrient-dense for so little calories, with loads of vitamin C and vitamin A, as well as potassium and manganese. I love its nutritional benefits! But…it often tastes sort of boring.
Luckily, after soaking in the marinade AND thanks to the high heat of the Panini press, this grilled zucchini actually takes on the savory garlic dill flavors! Plus, it looks like an impressive, gourmet dish, that’s secretly so simple to make. You can’t beat those grill marks!
Don’t get me wrong, zucchini’s mild taste can be great—for raw snacking, in a zoodle dish, or even snuck into muffins and breads. But, if you’re looking for a truly flavorful was to enjoy this low carb vegetable, give grilled zucchini a chance!
Garlic Dill Grilled Zucchini
Ingredients
- 4 zucchinis, 1 per serving
- 3 Tbsp oil
- 2 tsp garlic paste
- 1 tsp dried oregano
- 2 Tbsp fresh dill, chopped
- salt, to taste
- pepper, to taste
Instructions
- Slice zucchini about ¼ to ⅓ inch thick.
- In a large mixing bowl, combine marinade ingredients.
- Place zucchini slices in bowl and marinate as long as desired (a few minutes, a few hours, or overnight for more flavor).
- Preheat panini press to medium heat.
- Place slices on press, lower top, and cook for about 3 to 5 minutes, until zucchini have softened and have nice grill marks.
- Yields 4 servings garlic dill grilled zucchini.
