Best of all, these are an excellent freezer meal prep option that doesn’t even require any reheating! Simply freeze your oatmeal breakfast popsicles on meal prep day, and then enjoy them straight out of the popsicle mold in the morning when you’re ready to eat. Besides the time they need to freeze, you can prep this entire easy breakfast in just 20 minutes!

And, compared to other healthy breakfasts, these refreshing popsicles are ultra-convenient and hand-held!

What is a healthy popsicle?

As with any food, what’s “healthy” is relative. In this case, relative to sweet ice pops or ice cream that we might enjoy for dessert, these breakfast yogurt popsicles are more like a morning meal! Use plain Greek yogurt for a dose of protein, probiotic yogurt for digestive health benefits, or nondairy for vegan yogurt popsicles. Use whatever ingredients suit your lifestyle!

  • Oats. Either old fashioned oats or quick cooking oats will work in this recipe! Of course, quick oats will cook more quickly, while old fashioned oats make for a heartier texture. Alternatively, rather than cooking oatmeal, you could also try making these yogurt breakfast popsicles with layers of granola instead.
  • Prune Juice. I like to cook my oats in prune juice for some natural sweetness and flavor. Instead, you could use water, milk, or apple juice. For more flavor and saltiness, consider stirring some peanut butter or almond butter into your oatmeal after cooking!
  • Berries. Personally, I love the bright, tangy, sweetness of muddled berries in this breakfast popsicles recipe. They complete the parfait effect! For variety, you can really add any fresh fruit that you enjoy into your popsicles.
  • Yogurt. Dairy yogurt options like plain or Greek yogurt make for creamy popsicles, and they can add a boost of protein. For vegan breakfast popsicles, try using nondairy options like almond milk yogurt, coconut milk yogurt, or soy yogurt.

  • Separately, combine yogurt of choice and maple syrup.
  • Fill each popsicle mold with a few spoonfuls of oatmeal mixture, followed by yogurt mixture, alternating until all popsicle molds are filed. (Yields ~8 popsicles using a standard mold.)
  • Add popsicle sticks and freeze 4-6 hours or overnight.
  • When ready to enjoy, remove desired breakfast popsicles from molds and enjoy!

How long does it take for yogurt popsicles to freeze?

In my experience, these Greek yogurt popsicles need at least 4-6 hours to freeze completely. This freeze time can vary depending on the temperature of your freezer, as well as the type of yogurt that you use. Personally, I recommend freezing your breakfast popsicles overnight for best results!

Ingredients

  • ½ cup old fashioned oats, (or quick cooking oats)
  • 1 cup prune juice, (or apple juice, milk of choice, or water)
  • 1 cup fresh or frozen berries, (I used blueberries and raspberries)
  • ½ cup plain Greek yogurt, or yogurt of choice
  • 1-2 Tbsp maple syrup, to taste

Instructions 

  • Add juice to a saucepan and bring to a boil.
  • Add oats and turn down the heat. Cook until tender and integrated—about 10 minutes for old fashioned, or about 2 minutes for quick cooking. (Feel free to cook oats and liquid in the microwave if desired).
  • Muddle berries and mix into oatmeal mixture.
  • Separately, combine yogurt and maple syrup, to taste.
  • Fill each popsicle mold with 2-3 spoonfuls of oatmeal mixture, followed by a layer of yogurt, and alternate until all popsicle molds are filled.
  • Add popsicle sticks and freeze 4-6 hours or overnight.
  • Remove desired popsicles from mold and enjoy! (I use a warm towel on the outside of the mold to help release each popsicle.)
  • Yields ~8 oatmeal breakfast popsicles (depending on size of mold).
