Looking for a new way to fit veggies into your diet? Slice up a zucchini, marinate it, and toss it onto a Panini press! You’ll get beautiful grill lines and seal in all of the delicious flavors.
2 Tbsp dill
1 tsp dried oregano
2 tsp garlic paste
3 Tbsp olive oil
pepper to taste
salt to taste
4 zucchini sliced into strips
Slice zucchini about ¼ to 1/3 inch thick.
In a large mixing bowl, combine marinade ingredients.
Place zucchini slices in bowl and marinate as long as desired (a few minutes, a few hours, or overnight for more flavor).
Preheat panini press to medium heat.
Place slices on press, lower top, and cook for about 3 to 5 minutes, until zucchini have softened and have nice grill marks.
Serve immediately, or save for later.
Can store in an air-tight container and freeze for up to 3 months! When ready to enjoy, transfer to the fridge to thaw the day before you’re going to eat it, then microwave for 3 to 4 minutes until heated through.
