Mediterranean Tomato & Parsley Salad

Instead of a bed of greens, this Mediterranean salad keeps things light, fresh, and fragrant with parsley! Its bright aroma and earthy taste pair perfectly with the sweet, tangy tomatoes and salty olives. Feel free to jazz this recipe up with your favorite veggies and seasonings!


  • 1/2 cup cherry tomatoes halved
  • drizzle of extra virgin olive oil
  • 1/2 cup fresh parsley roughly chopped
  • 2-3 Tbsp kalamata olives sliced
  • 1 lemon juiced
  • pinch of salt
  • 2-3 Tbsp red onion chopped
  • Procedure

  • In a large mixing bowl, combine all ingredients and toss to coat.
  • Serve and enjoy! Feel free to add sliced avocado as a topping, or anything else that you like!
