What could be more comforting that sweet potato, maple, and cinnamon?! This healthy Thanksgiving side dish is so yummy, and works great for meal prep, too.
1.5 tsp cinnamon
2 Tbsp coconut oil
1/2 lemon juiced
3 Tbsp maple syrup
pepper, to taste
1/2 tsp salt
4 sweet potatoes (large), cubed
Preheat oven to 400°F (200°C).
Whisk together maple syrup, coconut oil, lemon juice, cinnamon, salt, and pepper.
Toss sweet potato cubes in mixture and transfer to a glass baking dish, 9 x 13 inches.
Cover with foil and bake 15 minutes. Uncover, stir, and return to oven for 30-35 more minutes, stirring once. Cook until tender and beginning to brown.
Yields ~2 cups.
Serving: 1/4 cup
