This egg salad is packed with wholesome protein and fats to keep you full and fueled! Plus, it’s loaded with tons of veggies for added nutrients and some crunch. The mixture of mashed boiled egg yolks, mayo, and mustard makes this dish extra creamy and flavorful. And, you can keep this egg salad clean by making your OWN mayo! 3 Tbsp broccoli rice
1 button mushroom chopped
1/2 celery stalk chopped
2 hard-boiled eggs separate yolks & whites, chop whites
3-4 Tbsp homemade mayo (see my keto meal prep video!)
pinch of paprika
pepper, to taste
3 Tbsp red bell pepper chopped
salt, to taste
1/2 tsp yellow mustard
In a large mixing bowl, mash boiled egg yolks. Add mayonnaise and mustard and mix to combine.
Add remaining ingredients and toss to coat.
Season to taste, serve, and enjoy!
