Simple Avocado Tomato Salad, Complex Nutrients

Often, it’s the simplest dishes that are the most nutritious.

And this 4-ingredient avocado tomato salad is proof! Its two main ingredients—avocado and tomatoes—are both all-star superfoods, rich in wholesome nutrients and disease-fighting plant compounds like antioxidants.

Tomatoes are well-known as one of the best sources of lycopene, which gives them their deep red color. And, lycopene acts as an incredible antioxidant in the human body! Antioxidants fight oxidation in the body, caused by damaging free radicals.

As we age, free radicals damage our cells and contribute to signs of aging like wrinkles, as well as the development of serious diseases like cancer.

But, a diet full of antioxidant-rich plant-based foods (like this avocado tomato salad) can help slow and reverse that damage!

More Avocado, Please

Besides all of its luscious creaminess, avocado brings some impressive nutrients to the table. And that’s because its deliciously indulgent texture comes from nutritious monounsaturated fats!

These fats, abbreviated as MUFAs and also known as omega-9s, are actually THE most abundant fatty acids in most cells in our body.

Because they’re majorly important! We all need MUFAs to help our bodies actually make use of the vitamins and minerals that we eat.

But, omega-9s also have some incredible health benefits, like balancing cholesterol, improving insulin sensitivity, fighting chronic inflammation, and even improving mood! And, with just the half of an avocado in this low carb avocado tomato salad, you get 11 grams of wholesome, disease-fighting fats!

Surprise: Avocado Tomato Salad is Actually a FRUIT Salad!

You’ve probably already gone through the shock of learning that tomatoes are actually a fruit and not a vegetable.

Well, strap in for shocker number two: avocado is also a sneaky fruit! But, if this is supposed to be a low carb avocado tomato salad, why use two vegetables that are actually fruits??

Generally, fruits aren’t a big part of a keto diet or low carb lifestyle, because they contain lots of carbs in the form of sugars!

But, avocado and tomato are both very low in sugar, much lower than traditional sweet fruits like bananas and apples. And, they’re also both excellent sources of dietary fiber.

That’s definitely a win-win for a low carb salad—meaning you get 6 grams of fiber and only 7 grams of net carbs in this avocado tomato salad! Feel free to give this keto salad a boost of fuel with a drizzle of extra-virgin olive oil!
