If you’re unsure of how to cook pork loin, roasting is a great option. And, you actually don’t need to cook pork all the way through. Just be sure it’s cooked to an internal temperature of 145°F, and you’ll have a deliciously tender roast with a blush pink center!

Honey Dijon Pork Loin Roast

Ingredients

  • 3 lbs boneless pork loin, trimmed
  • salt, to taste
  • pepper, to taste
  • drizzle of oil
  • ¾ cup Dijon mustard
  • 2 Tbsp honey
  • 1 Tbsp tarragon
  • parsley, for topping

Instructions 

  • Preheat oven to 375°F (180°C).
  • Season pork loin with salt and pepper.
  • In a bowl, mix Dijon mustard, honey, and tarragon. Set aside.
  • In a large oven-safe pan over medium-high heat, add a bit of oil and sear seasoned pork loin on all sides. (It will take about 4-6 minutes on all 4 sides.)
  • Brush seared pork loin with mustard sauce and cook in the oven for 35-45 minutes, until the internal temperature reaches 145°F (63°C).
  • Rest for 10-15 minutes before slicing, serving, and enjoying!
  • Yields 12 servings (~4 oz ea.) of honey Dijon pork loin roast.
