And, since I love a salty-sweet combo, I chose a honey Dijon glaze for this pork loin roast recipe. With a bit of tarragon and fresh parsley, it has a refreshingly herby and elegant taste!

Honey Dijon Pork Loin Roast
Ingredients
- 3 lbs boneless pork loin, trimmed
- salt, to taste
- pepper, to taste
- drizzle of oil
- ¾ cup Dijon mustard
- 2 Tbsp honey
- 1 Tbsp tarragon
- parsley, for topping
Instructions
- Preheat oven to 375°F (180°C).
- Season pork loin with salt and pepper.
- In a bowl, mix Dijon mustard, honey, and tarragon. Set aside.
- In a large oven-safe pan over medium-high heat, add a bit of oil and sear seasoned pork loin on all sides. (It will take about 4-6 minutes on all 4 sides.)
- Brush seared pork loin with mustard sauce and cook in the oven for 35-45 minutes, until the internal temperature reaches 145°F (63°C).
- Rest for 10-15 minutes before slicing, serving, and enjoying!
- Yields 12 servings (~4 oz ea.) of honey Dijon pork loin roast.

Recipe has nice flavor but your baking time of 40-50 minutes is WAY too long. Was bummed it was overcooked. Can this recipe be used on already chopped up pork tenderloin pieces? I ve been skeptical on what to do, because I am scared whatever recipe to use will make them dry due to the fact that they are already slit into individual pieces.
Hi there, the bake time is actually only 35-45 minutes! 🙂 You’re welcome to cook at a higher temperature for a shorter amount of time, but that’s more likely to dry out the meat.
You could try this recipe with chopped pork tenderloin pieces, but they wouldn’t need to cook for quite as long as an intact tenderloin. (Can’t speak to the exact amount of time, best to check it with a meat thermometer.)
