In a bowl, mix Dijon mustard, honey, and tarragon. Set aside.
In a large oven-safe pan over medium-high heat, add a bit of oil and sear seasoned pork loin on all sides. (It will take about 4-6 minutes on all 4 sides.)
Brush seared pork loin with mustard sauce and cook in the oven for 35-45 minutes, until the internal temperature reaches 145°F (63°C).
Rest for 10-15 minutes before slicing, serving, and enjoying!
