Why have paleo muffins or pancakes when you can have BOTH? Chow down on these paleo pancake mix muffins for a two-in-one breakfast treat! Combined with just a handful of additional ingredients, you can bake your favorite paleo pancake mix into fluffy muffins for noshing. I’m sharing how to make paleo blueberry muffins with an almond flour pancake mix in just 30 minutes.
Or, if you’re not interested in paleo muffins specifically, you can make classic pancake mix muffins using your favorite regular mix! That means dairy free, gluten free and grain free muffins made with the mix-ins of your choice. The bake time will vary slightly, but you can really make muffins with pancake mix of any kind. I’ll share my suggestions for both regular and paleo pancake mix muffins, as well as my personal favorite paleo pancake mix.

What is the difference between muffin mix and pancake mix?
Both muffin mix and pancake mix consist of a similar blend of flour, oil, leavening, salt, and other flavorings. The main difference is in how they’re prepared. A just-add-water pancake mix only needs added liquid, resulting in a lighter, fluffier texture. Muffin mix, on the other hand, typically has more sugar and calls for added fat (i.e., eggs and/or oil)—producing a denser, cakier texture.
Can you make muffins with pancake mix?
Yes, absolutely! The flavor and fluffiness of a syrupy pancake, baked into a muffin tin for easy munching. You can do this easily with a standard pancake mix like Bisquick Krusteaz—just combine with egg, milk, and maple syrup for sweetness. (However, you can’t just take an existing muffin recipe and replace the flour with pancake mix, since the mix contains additional ingredients like baking soda and powdered eggs.)
Or, for those wanting a gluten free option, you can also make paleo pancake mix muffins simply by using your favorite paleo pancake mix! Since these are generally made with an almond and/or coconut flour base, they’ll take a bit longer to cook than those made with the regular batter. But, I’ve gotta say, they were well-worth the wait! Honestly, I was amazed by how tasty they turned out.
What is the best pancake mix for regular vs. paleo pancake mix muffins?
Overall, the best pancake mix to use is whichever variety you already enjoy! Whether you’re Team Krusteaz or Team Bisquick, both will work great for pancake mix muffins. In general, most standard pancake mixes are pretty similar and can be used here.
Personally, I made my paleo pancake mix muffins using Thrive Market’s Paleo Pancake & Waffle Mix, made with a blend of almond flour and coconut flour. It’s great for pancakes and waffles as well, but it also made for some of the tastiest paleo blueberry muffins I’ve ever eaten! I also enjoy other paleo mixes, like Birch Benders, which is a similar blend and would work just as well in this recipe.

Personally, I’m highly partial to blueberry muffins overall. But I also think that blueberries were the perfect tart companion for the sweet maple flavor in these pancake mix muffins! Of course, you don’t have to make paleo blueberry muffins yourself. Whether you’re making these as a favorite breakfast or for meal prep, you can switch up the mix-ins for added variety! Paleo Pancake Mix Muffins Recipe
Ingredients
- 1 cup paleo pancake mix, (or your favorite pancake mix*)
- ⅓ cup almond milk
- 1 egg
- ¼ cup maple syrup
- ⅓ cup blueberries
Instructions
- Preheat oven to 350°F (180°C).
- To a large bowl, add pancake mix, almond milk, egg, and maple syrup. Mix well until smooth. Fold in blueberries
- Prepare and grease desired muffin tin(s) (regular or mini) or silicone molds. Scoop batter into baking vessel to fill about ⅔ of the way. (I used a cookie scoop to help with portioning.)
- Bake 17-22 minutes for regular muffins, or 8-13 minutes for mini muffins. (In medium silicone molds, my muffins needed 15-20 minutes.) When a toothpick comes out clean, they’re done.
- Yields ~8 regular muffins, or ~20 mini muffins. (Yielded 10 medium muffins using my square silicone mold cups, filled with ~3 Tbsp batter each.)

Note on Cook Time: With almond flour-based muffins like these, be prepared for a longer bake time, around 20 minutes. When a toothpick comes out clean, the muffins are done. *Substituting Regular Pancake Mix: If you decide to make pancake mix muffins with regular pancake mix (i.e., non-paleo, Bisquick, Krusteaz etc.), the cook time will be much shorter. Start with 4-5 minutes and monitor as you go!

Hi. Some questions: “Mix well until smooth?” That is not a muffin method. You’ve made cake here. Have you tried this recipe using a proper muffin method where the batter is scarcely mixed and quite thick and clumpy?
I am just embarking on a moderated Keto plan, so I’ve never baked anything Keto.
Hello! Yes, this pancake mix muffins recipe is made with pancake mix, and so we find that the batter is best mixed well until smooth. We have not tried the recipe with a thick and clumpy batter, but you’re welcome to try it that way if preferred 🙂
