How to Make Instant Pot Egg Bites (Better than Starbucks!)

If you’re a Starbucks egg bites fan, you’ve got to try this instant pot sous vide egg bites recipe! Fluffy, creamy, cheesy instant pot egg bites with veggies, bacon, or your favorite mix-ins.

You’ll save a pretty penny with this homemade version instead of heading to Starbucks, and they’re seriously just as tasty. Maybe even tastier—especially since you can customize your instant pot sous vide egg bites with whichever veggies, meats, and cheeses you like!

And, they couldn’t be simpler to make. With the help of a nifty silicone egg bites mold, you just add in your fillings, blend up the cheesy egg mixture, and pour it into each cavity. Place the entire mold into the instant pot, on top of a metal trivet, and set to steam for just a few minutes!

Made with a protein packed egg mixture, crumbled bacon, and chopped bell pepper, this particular instant pot egg bites recipe is an awesome low carb and keto breakfast option. Instant Pot Sous Vide Egg Bites Ingredients

Remember, you can make your instant pot egg bites with any filling ingredients you choose. I’m personally going with cooked and crumbled bacon along with chopped bell pepper. Try out different veggies or whatever’s leftover in the fridge, a different breakfast meat, no meat at all for vegetarian bites—whatever works for you!

As for the cheesy egg mixture, you’re welcome to experiment with different types of cheese if you’d like. Try shredded Swiss or Gouda instead of cheddar, or whatever’s your favorite!

But, I do recommend that you stick with the basic elements of this instant pot sous vide egg bites recipe: use some kind of shredded cheese, along with the cottage cheese and heavy cream. I haven’t tried substituting for these ingredients personally, so I can’t say how your egg bites would turn out without them!

Some recipes omit the heavy cream, others replace the cottage cheese with cream cheese—it’s up to you if you’d like to experiment with any of these substitutions.

Sous Vide Egg Bites Fillings

4-6 strips bacon, cooked & crumbled (to taste)
1 cup bell pepper, diced
or fillings you want!

Cheesy Egg Mixture

5 eggs
¾ cup shredded cheddar cheese
½ cup cottage cheese
¼ cup heavy cream (or milk)
½ tsp salt

Equipment

1 cup water
metal trivet

Add egg bites filling ingredients into silicone mold

How to Make Instant Pot Egg Bites with Silicone Mold

To start, grab your instant pot egg bites silicone mold and spray it down well with cooking spray. Then, add in any desired fillings: for me that’s crumbled bacon and chopped bell pepper. Do your best to distribute and veggies or meats evenly among the cavities, and keep in mind that this recipe will yield around 2 mold’s-worth of instant pot egg bites (14 bites)!

Next, add all of the ingredients for your cheesy egg mixture into a blender and blend until smooth. It should be somewhat thick, but you want it nice and smooth and integrated!

Finally, simply pour the mixture straight into your mold—leaving a bit of room at the top of each cavity for your egg bites to expand, rather than filling them all the way to the top. You’ll have about half of your cheesy egg mixture leftover, which you can just store in the fridge until you’re ready to cook a second batch.

To cook that first batch, add water into the instant pot, followed by a metal trivet, and place your filled mold on top. Close and seal the lid, then use the “steam” function to cook for 8 minutes.

When the time’s up, you can natural release the steam for 10 minutes, followed by a quick release for any remaining steam. All that’s left to do is remove the lid, carefully remove your egg bites mold, and allow to cool!

After natural pressure release, remove instant pot sous vide egg bites from machine and cool slightly.

Options for Making Egg Bites without a Silicone Mold

Let me just say, I love my silicone egg bites mold and I’ll definitely be using it again and again! It’s convenient, easy to clean, and I love the perfect little bite-sized goodies it allows me to cook in the instant pot. But, you can totally make these instant pot sous vide egg bites without a mold if you don’t have one, or if you prefer not to buy one.

Option #1: Mason Jars

For those with no silicone egg bites mold, use small 4oz mason jars instead! Just spray the inside of each jar with cooking spray, add your fillings, and pour in your cheesy egg mixture. Then, cover each jar loosely with foil before placing them into the instant pot.

Option #2: Bake in the Oven

If you like the looks of this egg bites recipe but none of the instant pot methods appeal to you, fear not. You can also bake these little bites in the oven! Fill greased mini muffin tins with your fillings and egg mixture, then bake at 350°F for 40-45 minutes.

How to Serve & Store

Of course, if you want to enjoy your instant sous vide egg bites Starbucks style, devour while they’re warm and fresh! But, if you aren’t ready to eat them all at once, there’s good news: these are absolutely delicious enjoyed cold, too.

To store, package into an airtight container and keep in the fridge for up to a week. Or, for longer-term storage, these instant pot egg bites can also go in the freezer for up to 3 months! But, pro tip: thaw frozen egg bites in the fridge overnight, then reheat and eat. Formerly-frozen and thawed egg bites are best served warm, not quite as tasty enjoyed cold.

How to make instant pot egg bites in a silicone mold – with veggies, bacon, or any fillings you like.

Ingredients

Instant Pot Egg Bites Filling

  • 6 strips bacon, cooked & crumbled (to taste)
  • 1 cup bell pepper, diced
  • or any fillings you like!

Cheesy Egg Mixture

  • 5 eggs
  • ¾ cup shredded cheddar cheese
  • ½ cup cottage cheese
  • ¼ cup heavy cream, or milk
  • ½ tsp salt

Equipment

Instructions 

  • Cook bacon as desired and drain on paper towels.
  • Spray silicone mold* well with cooking spray.
  • Crumble cooked bacon and distribute into silicone mold, followed by chopped bell pepper. (Or, add fillings of choice.)
  • In a blender, combine eggs, shredded cheese, cottage cheese, heavy cream, and salt. Blend until well-integrated and smooth.
  • Pour egg mixture into silicone mold, leaving a bit of room at the top for the egg bites to expand as they cook.
  • Add 1 cup water into instant pot along with metal trivet. Place silicone mold (or jars) on top of trivet.
  • Cover instant pot with lid and set to “steam” for 8 minutes.
  • Natural pressure release for 10 minutes. Quick release any remaining steam as needed.
  • Carefully remove mold from instant pot. Allow to cool slightly before popping bites out from mold.
  • Enjoy warm or cold! Package in an airtight container and refrigerate to store for up to a week.
  • Or, store in the freezer for up to 3 months. (Just know that frozen egg bites are best enjoyed after thawing and reheating. They’re not ideal to enjoy cold after being frozen and thawed.)
  • Yields 14 egg bites using silicone egg bites mold (2 trays).

*Option for no silicone mold:

If you don’t have a silicone egg bites mold, you can also use small, 4oz mason jars. Spray the inside of the jar with cooking spray, add your fillings and cheesy egg mixture, then cover loosely with foil before placing into the instant pot.
 

To cook in oven:

Distribute crumbled bacon, bell pepper (or fillings of choice), and egg mixture into greased mini muffin tins. Bake at 350°F (180°C) for 40-45 minutes.
