Salted Caramel Energy Bites

These bites may be tiny, but they’re packed with mighty energy! These chewy delights are a great fuel-filled snack. Tahini and dates are a surprising combo, but they mimic salted caramel flavor so well!

Ingredients

  • 1 1/4 cups old-fashioned rolled oats
  • 1 cup pitted dates soaked in warm water (about 1 hour)
  • 1/2 cup roasted salted cashews
  • pinch of salt
  • 2 Tbsp tahini
  • 1 tsp vanilla
  • Procedure

  • In a food processor, blend all ingredients (except for oats). Process into a dough (about 1 minute).
  • Transfer to a mixing bowl and stir in oats.
  • Refrigerate mixture for about 15 minutes.
  • Roll into about 1 inch balls (I used a 4 teaspoon cookie scoop to help form my balls).
  • Refrigerate for 2 to 3 hours, and enjoy!
  • Yields 15-20 energy bites.
