These cookie bars are SO deliciously ooey-gooey, thanks to a secret, fuel-filled ingredient: CHICKPEAS! You’d never guess based on how these beauties taste! Try out the recipe and see for yourself!
1/4 tsp baking powder
1/4 tsp baking soda
1/2 cup cashew butter
1 can of chickpeas 15 oz, drained & rinsed
1/3 cup maple syrup
1/2 tsp salt
1 tsp vanilla
2 Tbsp chocolate chips (use dairy-free for vegan!)
2 Tbsp mini m&m’s (optional)
pinch of salt
Preheat oven to 375°F (190°C).
Line a loaf pan with parchment paper and spray with cooking spray.
Combine everything in a food processor or blender (except for chocolate chips and mini m&m’s) and blend to a batter consistency.
Stir in chocolate chips.
Pour batter into pan, then sprinkle additional chocolate chips, mini m&m’s, and kosher salt on top.
Bake 40 minutes, cover with foil, then bake another 20 minutes, until a toothpick comes out clean.
Cool for 10 minutes in the pan. Gently remove from pan, and allow to cool on a cooling rack for another 30 minutes.
Cut into squares and enjoy!
