You CAN have sweet treats on a low carb lifestyle! The natural sweetness and creaminess of the coconut make this healthy snack as indulgent as a dessert. But, using fiber syrup keeps this treat low in net carbs and sugar-free! Plus, between the coconut shreds and oil, each bar has TONS of fuel-filled fats and medium-chain triglycerides (MCTs)! No baking necessary for this easy recipe—the hardest part will be not eating them all at once.
1 cup coconut oil
3-4 Tbsp low carb fiber syrup (or liquid sweetener of choice)
pinch of salt
3 cups unsweetened coconut shreds
1/2 tsp vanilla extract
In a large mixing bowl, mix everything together until you have a thick mixture. If it’s crumbly, add a bit of extra fiber syrup.
Pour into an 8×8-inch pan lined with foil.
Use wet hands to press mixture into pan until flat.
Refrigerate or freeze until firm.
Cut into bars and enjoy!
