No Bake Coconut Bars

You CAN have sweet treats on a low carb lifestyle! The natural sweetness and creaminess of the coconut make this healthy snack as indulgent as a dessert. But, using fiber syrup keeps this treat low in net carbs and sugar-free! Plus, between the coconut shreds and oil, each bar has TONS of fuel-filled fats and medium-chain triglycerides (MCTs)! No baking necessary for this easy recipe—the hardest part will be not eating them all at once.

Ingredients

  • 1 cup coconut oil
  • 3-4 Tbsp low carb fiber syrup (or liquid sweetener of choice)
  • pinch of salt
  • 3 cups unsweetened coconut shreds
  • 1/2 tsp vanilla extract
  • Procedure

  • In a large mixing bowl, mix everything together until you have a thick mixture. If it’s crumbly, add a bit of extra fiber syrup.
  • Pour into an 8×8-inch pan lined with foil.
  • Use wet hands to press mixture into pan until flat.
  • Refrigerate or freeze until firm.
  • Cut into bars and enjoy!
  • Yields 16 bars
  • Per serving: 7g total carbs | 5g fiber | 1g sugar | 2g net carbs
