Chocolate Chia Vegan Breakfast Cookies
For those action-packed summer days when you’re on-the-go or traveling, these chocolate chia vegan breakfast cookies are a life-saver! And, they’re a real taste-bud-pleaser—even for the little ones or picky eaters. Plus, not only is this a totally vegan breakfast cookies recipe, but it’s also gluten free AND grain free!
Instead of using flour or oats as the base, the Domestic Geek’s vegan breakfast cookies are made primarily of mashed banana, nut butter, and chia seeds. After soaking in water, the chia seeds act like a vegan egg substitute to hold the cookies together, while the cocoa powder and nut butter create an irresistible chocolaty, nutty flavor.
Using one of the tasty ‘mix it up’ options that Sara Lynn offers in her book, I adapted the recipe to make chocolate peanut butter breakfast cookies, and they are SO GOOD. Chewy, soft, and incredibly light—almost like a fluffy cake baked into breakfast cookie form!

Chocolate Chia Vegan Breakfast Cookies
- 2 large ripe bananas
- 1 cup smooth natural almond butter, I used peanut butter instead for the ‘mix it up’ option!
- ¼ cup chia seeds, soaked in ¼ cup water for 10 minutes
- ¼ cup unsweetened cocoa powder
- ¼ cup coconut sugar
- 1 tsp vanilla extract
- 1 tsp baking powder
Optional Mix-Ins
- ⅓ cup chopped peanuts, for ‘mix it up’ option
Watermelon Cucumber Salad with Feta
This watermelon cucumber salad is truly one of the MOST refreshing summer meals of all time! It’s so perfectly easy and simple to throw together, and it’s such a genius flavor combination.
For me, watermelon and cucumber are classic summertime snacks all on their own. But Sara Lynn has paired together in this watermelon cucumber salad, and they’re a match made in heaven!
Cool, hydrating, and sweet—with a fragrant burst of fresh mint and a satisfyingly savory bite of feta cheese.
You can toss this colorful summer salad together for lunch in just a few minutes, on even the busiest of days or when you’re just hanging by the pool. Or, prep a larger batch and you’ve got flavorful, light, EASY summer meals that are sure to please any crowd!
Watermelon Cucumber Salad with Feta

Refreshing watermelon and cucumber salad with feta cheese crumbles and fresh mint.Ingredients
- 2 Tbsp fresh lime juice
- 1 Tbsp honey
- 4 cups cubed watermelon
- 1 English cucumber, seeded and thinly sliced
- ¼ cup crumbled feta cheese
- 8 fresh mint leaves
One Pot Mediterranean Pasta
You’d better believe Sara Lynn makes the most of one pot dinners in Meals Made Easy. I mean, all of your ingredients go into the same pot and you’re left with just ONE dish to wash? Can’t get much easier than that!
This one pot Mediterranean pasta is warm and satisfying, but still so light and nutritious. And, you can have it ready in just 20 minutes—perfect for quick summer meals to feed the whole family! You can make this one pot dinner with any kind of penne pasta you like, but I went with whole-wheat for a whole-grain nutritional boost.
There’s so much scrumptious flavor AND plentyof wholesome veggies packed into this one pot pasta dish. Savory, deliciously balanced with the acidity of the tomatoes and red peppers, and a salty bite from the olives and feta cheese.
Serve it straight from your pot or Dutch oven after cooking, or enjoy the leftovers cold! It’s just as crave-ably tasty, and a refreshing option for serving up summer meals on those hottest of the hot days.
One Pot Mediterranean Pasta
Ingredients
- 4 cups vegetable broth
- 1 lb penne
- 2 cups halved cherry tomatoes
- 2 garlic cloves, minced
- 1 Tbsp Greek Seasoning, p. 230 in Meals Made Easy
- 3 cups chopped baby spinach
- ½ cup chopped jarred artichoke hearts marinated in oil
- ¼ cup chopped jarred roasted red peppers
- ¼ cup chopped pitted Kalamata olives
- Salt and freshly ground black pepper
- ¼ cup crumbled feta cheese, for serving
