Healthy Strawberry Scones Recipe | Gluten Free & Lower Carb
Healthy Strawberry Scones – Low Carb & Paleo-Friendly!
Gluten free, lower carb, and berry delicious—this strawberry scones recipe is one of my all-time favorite healthy desserts! But, if you’re skeptical of a healthy scones recipe, don’t be fooled. Yes, these strawberry scones ARE actually healthy, made with clean, wholesome ingredients and very little sugar. And, even though I’ve nixed the traditional butter and shortening, you’d never guess.
They’re just as crave-ably cakey and biscuit-like—as all good scones should be! Personally, I love the nutty flavor and soft, slightly-crumbly bite from the almond flour. And, it’s a simple, healthy alternative to refined flours that also keeps the carb count low!
These strawberry scones are also low in sugars, with just 2 tablespoons of honey in the entire recipe. Of course, the glaze will add to the sugar content of your strawberry scones, but I think the extra bit of indulgence is worth it!
Crafting a Healthy Scones Recipe
Traditionally, scones are made with refined flour, a heap of sugar, and a combination of fats—like butter, shortening, and/or cream. And, some kind of fresh or dried fruit is usually thrown into the mix. The classic recipe itself is pretty simple! But, like most baked goods, it’s far from fuel-filled…
Luckily, it’s just as simple to craft a healthy scones recipe! Refined flours are the classic choice for baking because they’re ultra-fine in texture. But, refining strips away all of the nutritious parts of the grain, with the fiber, vitamins and minerals.
Instead, almond flour is a great alternative that’s less refined and far more nutritious! Since it’s just made of ground-up almonds, it still contains all of the wholesome fiber, protein, and satiating fats in the original nuts. And, for that reason, it’s my go-to choice for low carb desserts! Plus, almond flour keeps these healthy strawberry scones naturally gluten free.
Then, rather than using the traditional fat sources, I kept these strawberry scones cleaner and dairy free with eggs and egg whites. Believe it or not, they’re just as effective at giving this dough body and a soft texture! But, they’re less processed fat sources, and far better choices than the harmful trans fats in shortening. And, they help to pack 7 grams of protein into each of these strawberry scones!
If You Want Truly Low Carb Strawberry Scones:
Already, thanks to the almond flour and the low sugar content, these strawberry scones are pretty low in carbs. But, if you’re on a low carb lifestyle or keto diet, a few simple swaps can bring down the carb count even more! Strawberries are actually a naturally lower-sugar fruit that are often suitable for a low carb diet.
Of course, you could swap them out for another fruit if preferred. Or, you could omit them if you’re really trying to nix as much sugar as possible. But, they add very little sugar to each scone—and loads of deliciousness! (Plus, this is a strawberry scones recipe, after all…)
Then, instead of using honey, you can substitute with the low carb sticky sweetener of your choice! I recommend a low carb fiber syrup, so you can cut some of the carbs AND increase the fiber content.
Finally, for a Low Carb Glaze:
For a genuinely keto-friendly, low carb scone, you can also low-carb-ify the glaze! Obviously, powdered sugar isn’t ideal for a low carb dessert. But, there are loads of clean, sugar free powdered sugar options that you can find online. Or, save some money and try making your own stevia powdered sugar at home! It’s so simple, and it’ll work just as well in a low carb glaze for your strawberry scones.
Whether you’re looking for low carb scones, healthy scones, or just the tastiest strawberry scones you ever did eat, give this recipe a whirl!
