Healthy Strawberry Scones Recipe | Gluten Free & Lower Carb

Gluten free, lower carb, and berry delicious—this strawberry scones recipe is one of my all-time favorite healthy desserts! But, if you’re skeptical of a healthy scones recipe, don’t be fooled. Yes, these strawberry scones ARE actually healthy, made with clean, wholesome ingredients and very little sugar. And, even though I’ve nixed the traditional butter and shortening, you’d never guess.

Ingredients

Strawberry Scones:

  • 2 cups almond flour
  • 2 Tbsp egg whites
  • 1 egg
  • ½ tsp baking soda
  • 2 Tbsp honey
  • 1 tsp lemon juice
  • ½ tsp salt
  • ¾ cup strawberries sliced

Glaze:

  • cups powdered sugar sugar free for low carb
  • 3-4 Tbsp milk of choice
  • 1 lemon juice and zest
  • pinch of salt

Instructions

  • Preheat oven to 350°F (180°).
  • Combine all ingredients except for berries in a bowl. Mix until well combined.
  • Stir in berries (I found my hands to be the best tools for mixing this!)
  • Transfer dough to a floured surface and mold into square that’s about 7×7 inches.
  • Cut square into 4ths so you have 4 squares. Cut each of those squares diagonally in half so you have 8 right-angle triangles.
  • Transfer to a baking sheet lined with parchment paper.
  • Bake 11–15 minutes, until they begin to brown on top and aren’t mushy.
  • To make glaze, add all glaze ingredients to a mixing bowl and whisk to combine.
  • Remove scones from oven, transfer to a wire rack, and drizzle on glaze, if desired.
  • Allow to cool completely before devouring!
