How to Make Stuffed Mushrooms in the Air Fryer or Oven
These air fryer stuffed mushrooms are the perfectly bite-sized finger food, and a sure-fire crowd favorite at any gathering! A savory, comforting, sausage and cream cheese filling, stuffed into tender mushroom caps. With a hint of sweetness from the chopped dates in the filling, the flavor combination is irresistible! I’m sharing how to make stuffed mushrooms in the air fryer OR oven, and what I like about each method.
For years now, I’ve made these at just about every family gathering and they’re always a hit. When I’m cooking for a group, I prefer to bake my stuffed mushrooms in the oven where I can fit larger batches. The air fryer stuffed mushrooms are best cooked in a few smaller batches, but they turn out a special kind of crispy that’s worth the wait! Whether you try air fried or oven baked, you’ll be glad you did.
Do you need to wash mushrooms before stuffing them?
You’re welcome to wash your mushrooms first, but you don’t have to. It’s up to you and your preference! Some mushrooms are cleaned before packaging, others come with a smidge of dirt on them which you may or may not wish to wash off. (That dirt can be a surprising source of healthy probiotics that support your gut!)
If you do wish to wash your mushrooms, I recommend lightly rinsing them with cool water. Then, pat dry with paper towels before assembling your stuffed mushrooms for the air fryer or oven. But, you do NOT want to soak the mushrooms, otherwise they’ll absorb all that water like sponges and may turn out soggy.
How do you keep stuffed mushrooms from getting soggy?
Sometimes, oven baked stuffed mushrooms can turn out a bit wet or soggy after cooking. In reality, this is normal! As the mushrooms heat up and cook, they become softer and more tender, and they release moisture. That moisture is just a natural byproduct of the cooking process, but there are a few ways to reduce the sogginess if desired:
- When cleaning the mushrooms, don’t soak them in water. Either lightly rinse and then pat them dry, or skip the water and cleaning altogether.
- Bake stuffed mushrooms at a high temperature of 400°F (200°C). The high heat will help absorb moisture and reduce sogginess.
- Make stuffed mushrooms in the air fryer instead of the oven! Though the oven lets you cook in larger batches, air fryer stuffed mushrooms do tend to turn out drier and less soggy. This air fryer has perforations in the cooking drawer which allow heat to circulate, while also allowing some of that moisture to drain away from the mushrooms.
How to Make Stuffed Mushrooms in Air Fryer
Making air fryer stuffed mushrooms is a simple and straightforward process, and they only need to cook for a few minutes. But, the main downside of this method is that you can only cook 7-10 mushrooms at a time, so you’ll need to cook 2-3 separate batches.
- Clean and prepare mushrooms as desired, removing stems.
- Cook onion, shallot, and ground sausage. Combine with softened cream cheese and other filling ingredients.
- Spoon 1-2 tablespoons of filling mixture into each mushroom cap. Once prepared, sprinkle additional parmesan on top of each mushroom.
- Cook 7-10 mushrooms at a time in air fryer at 370°F (190°C) for 6-8 minutes. Repeat with additional batches as needed.
How to Make Stuffed Mushrooms in Oven
To make oven baked stuffed mushrooms, the process is even more streamlined. This is why the oven is my preferred cooking method for this particular appetizer recipe: because I can cook all 20 or so stuffed mushrooms in the oven at the same time. At 400°F (200°C), they’ll need to cook for 20 minutes—ultimately about the same amount of time as cooking multiple batches in the air fryer.

Can stuffed mushrooms be served at room temperature?
Yes, you can serve these stuffed mushrooms at room temperature, and they’ll be totally delicious! If you’re hosting a gathering or bringing these to a party, they could sit out for 2-3 hours and still be tasty and enjoyable to nosh on. Although, personally, I like these best served fresh and warm!
Can I store sausage stuffed mushrooms for later?
Absolutely—store cooked stuffed mushrooms in an airtight container for 3-5 days in the fridge. You’re welcome to enjoy them cold, or re-heat in the oven or toaster oven for tastiest results!
Taste Test: Oven vs. Air Fryer Stuffed Mushrooms
The beauty of this recipe is that it’s awesomely delicious no matter which cooking method you choose! In my experience, the air fryer stuffed mushrooms have a crispier texture on the filling, and the mushrooms themselves turn out more dry and less moist/soggy. The oven baked mushrooms turn out more tender and moist, and I find the filling has a sweeter, more caramelized flavor which I love!

Oven / Air Fryer Stuffed Mushrooms
- 20 baby bella mushrooms, stems removed
- 1 Tbsp oil or butter
- 1 tsp shallot, finely diced
- 1 tsp garlic, minced
- 8 oz mild Italian sausage
- 4 oz cream cheese, softened
- 10-12 Sunsweet® Pitted Dates, chopped, (½ cup)
- ¼ cup grated parmesan + 2 Tbsp for topping
- 2 Tbsp almond flour
- ¼ cup parsley, chopped
To Make Stuffed Mushrooms in Air Fryer
- Preheat air fryer to 370°F(190°C).
- Clean and prepare mushrooms as desired, removing stems and setting aside mushroom caps to stuff with filling.
- In a skillet, melt oil or butter and add shallot and garlic and cook until fragrant, 3-4 minutes. Remove from the pan.
- Add sausage and break up to cook through, 5-6 minutes.
- Combine sausage, onion mixture, cream cheese, chopped Sunsweet® Pitted Dates, parmesan cheese, almond flour, and parsley in a bowl.
- Spoon 1-2 Tbsp mixture into each mushroom cap. Finish with a sprinkle of parmesan on top.
- Add 7-10 stuffed mushrooms into preheated air fryer and cook for 8 minutes, until browned. Carefully remove cook mushrooms and repeat with 2nd batch.
- Serve garnished with parsley and enjoy!
To Make Stuffed Mushrooms in Oven
- Preheat oven to 400°F (200°C).
- Follow same procedure as outlined above, except transfer stuffed mushrooms on a prepared baking sheet before finishing with a sprinkle of parmesan.
- Bake 20 minutes, until browned and cooked through. Serve garnished with parsley.
