20 baby bella mushrooms, stems removed 1 Tbsp oil or butter 1 tsp shallot, finely diced 1 tsp garlic, minced 8 oz mild Italian sausage 4 oz cream cheese, softened 10-12 Sunsweet® Pitted Dates, chopped (½ cup) ¼ cup grated parmesan + 2 Tbsp for topping 2 Tbsp almond flour ¼ cup parsley, chopped
To Make Stuffed Mushrooms in Air Fryer Preheat air fryer to 370°F(190°C). Clean and prepare mushrooms as desired, removing stems and setting aside mushroom caps to stuff with filling.
In a skillet, melt oil or butter and add shallot and garlic and cook until fragrant, 3-4 minutes. Remove from the pan.
Add sausage and break up to cook through, 5-6 minutes.
Combine sausage, onion mixture, cream cheese, chopped Sunsweet® Pitted Dates, parmesan cheese, almond flour, and parsley in a bowl.
Spoon 1-2 Tbsp mixture into each mushroom cap. Finish with a sprinkle of parmesan on top.
Add 7-10 stuffed mushrooms into preheated air fryer and cook for 8 minutes, until browned. Carefully remove cook mushrooms and repeat with 2nd batch.
Serve garnished with parsley and enjoy!
To Make Stuffed Mushrooms in Oven Preheat oven to 400°F (200°C).
Follow same procedure as outlined above, except transfer stuffed mushrooms on a prepared baking sheet before finishing with a sprinkle of parmesan.
Bake 20 minutes, until browned and cooked through. Serve garnished with parsley.
