What are mug cakes?
If you’ve got baked goods on the brain but you don’t have an oven (or you don’t want to use it)…what to do? Microwave mug cakes: to the rescue! A microwave mug cake is a convenient single-serving cake that you can make with only a handful of ingredients, and it cooks in the microwave. No need for baking equipment or a hot oven – this 1 minute funfetti mug cake cooks in literally 60 seconds!
Is a funfetti mug cake the same as a vanilla mug cake?
A funfetti cake is basically a version of a vanilla cake with rainbow sprinkles. The name “funfetti” came from Pillsbury, when they combined “fun” + “confetti” to describe the cake’s colorful sprinkles. Typically, funfetti is a white vanilla cake, made with egg whites and no yolk. For this recipe, I’ve made a yellow vanilla mug cake using an egg yolk, then added sprinkles. So this technically isn’t traditional funfetti, but I love the taste of a yellow cake!
Gluten Free Funfetti Mug Cake Ingredients
- Oat Flour. The perfect light-and-fluffy base for a gluten free vanilla mug cake recipe! Just be sure to use certified GF oat flour if needed. This recipe will likely also work with GF all-purpose flour (or regular all-purpose flour).
- Granulated Sweetener. White granulated sugar works well, or you can use a natural low carb / no calorie sweetener like stevia or erythritol. Made with stevia, this healthy funfetti mug cake has only 4g sugar total—sprinkles and all!
- Baking Powder. An essential ingredient in any microwave mug cake recipe to get the cake to rise and fluff up!
- Salt.
- Egg Yolk. Save the whites in an omelet or scramble!
- Coconut Oil. Or you can also use butter for a richer, fluffier texture.
- Milk. Use your choice of dairy milk, or nondairy milk for a dairy free mug cake.
- Vanilla Extract.
- Sprinkles. Don’t forget to add some colorful sprinkles to complete the full funfetti effect!
Substitution Note: For a classic vanilla mug cake
If you’re not feeling funfetti or you just don’t have sprinkles at home, feel free to skip them. You’re welcome to add a different mix-in to change up the flavors, like chocolate chips or chopped nuts. Or, skip the mix-ins altogether and enjoy the classic comfort of a gluten free vanilla mug cake!
How to Make a Funfetti Mug Cake in 1 Minute
- In a bowl, whisk together dry ingredients. Add wet ingredients, mixing until smooth and there are no lumps. Stir in rainbow sprinkles last.
- Grease the inside of a mug (12-16oz) with cooking spray, then add vanilla mug cake batter.
- Microwave according to your machine’s wattage, until spongy and springy to the touch. (In my 1000-watt microwave, this cake cooked for ~1 minute.)
- Let cake rest in mug for a minute before flipping over onto a plate and removing the cake. Best enjoyed immediately!
Microwave Wattage Conversion for Cook Time
In my 1000-watt microwave, this microwave funfetti mug cake cooked for almost exactly 1 minute. But, mug cakes can be tricky, so you’ll need to do some testing & checking to find the right cook time for your machine. Check the wattage on your microwave and reference the suggested cook times below. Start out with less time than what’s listed and work your way up, until your vanilla mug cake is spongy and springy to the touch.
- 700-watts: 1 minute 25 seconds
- 800 watts: 1 minute 15 seconds
- 900-watts: 1 minute 5 seconds
- 1000-watts: 60 seconds
- 1100-watts: 55 seconds
- 1200-watts: 50 seconds
- 1300-watts: 45 seconds
Gluten Free Funfetti Mug Cake
Ingredients
Dry Ingredients:
- ¼-⅓ cup oat flour, can make your own by blending rolled/quick oats!
- 2 Tbsp granulated sweetener of choice
- ¼ tsp baking powder
- pinch of salt
Wet Ingredients:
- 1 egg yolk
- 2 Tbsp coconut oil or butter, melted
- 1 Tbsp milk of choice
- 1 tsp vanilla extract
Optional Mix-In:
- 2 tsp sprinkles
Instructions
- Add dry ingredients to a bowl (oat flour, granulated sweetener, baking powder, and salt) and whisk to combine.
- Add wet ingredients (egg yolk, melted coconut oil or butter, milk, and vanilla extract) and mix well, until no clumps or lumps remain.
- Stir in sprinkles last (or omit for a vanilla mug cake).
- Spray the inside of a mug (12-16oz) with cooking spray. Transfer funfetti cake batter into mug.
- Microwave 45-70 seconds (about 1 minute), until spongy and springy to the touch. (This cook time is based on my 1000-watt microwave at 100% power. Use cook time guidance below to adjust based on your microwave's wattage.)
- Turn mug over onto a plate, remove cake, serve, and enjoy!

This! This! Make this! It is beyond beyond gooood! I used maple syrup instead of vanilla and did 1 tablespoon cane sugar and one tablespoon brown sugar…. Soooooo yummmy. I hope this works for a bigger cane
