Can it be? Sour cream with NO cream at all?? YES, make your own dairy-free sour cream using raw cashews! After soaking in warm water, raw cashews blend up into a thick, silky smooth texture. And, with apple cider vinegar and lemon juice, it has the classic tangy taste of traditional sour cream—without the dairy! Seriously, this stuff is so good—it’s one of our FAVORITE vegan recipes!
1 Tbsp apple cider vinegar
1 lemon juiced
2 cups raw cashews (soaked & drained)
salt, to taste
1/2 cup water
Soak cashews overnight, or for a few hours.
Drain cashews, then add to a food processor or blender with remaining ingredients.
Blend until creamy. Season to taste.
Serve on tacos or as a dip, and enjoy!
Yields ~2 cups vegan sour cream.
