Try this wholesome, delicious dinner that you can make all on ONE PAN! I used low-sugar barbeque sauce to pack flavor into my chicken, and simple seasonings on my roasted veggies! Feel free to use your own favorite seasonings, and multiply this recipe to make more servings. Great recipe for meal prep!
1.5 cups brussels sprouts halved/quartered
1.5 cups butternut squash cubes (can substitute sweet potato)
1/2 pound (LB) chicken breast
drizzle of olive oil
2 Tbsp low-sugar barbecue sauce (enough to cover each chicken breast)
Preheat oven to 425°F (220°C).
Place your chicken, butternut squash, and Brussels sprouts onto a baking sheet lined with parchment.
Brush chicken breasts with barbecue sauce.
Drizzle olive oil onto butternut squash cubes and Brussels sprouts. Season butternut squash with chili powder and salt. Season Brussels sprouts with salt and pepper. Toss to coat.
Bake for 30 minutes, until chicken reaches 160°F (70°C).
