Indian Tomato and Onion Salad

One of the BEST things about salads is that they’re simple—but they don’t have to be boring. First of all, if you can’t stand raw leafy greens, you don’t need a bed of greens in your salad! Plus, with only a few seasonings and some fresh cilantro, this Indian tomato and onion salad is bursting with fun, fresh flavors. Enjoy as a side dish, as part of a Buddha bowl, or all on its own!

Ingredients

  • 1 cup cherry tomatoes
  • 1/2 cup cucumber chopped
  • pinch of cumin
  • drizzle of extra virgin olive oil
  • 1 Tbsp lime juice
  • pinch of pepper
  • pinch of salt
  • 2-3 Tbsp red onion slices
  • Procedure

  • Add all ingredients to a large mixing bowl and toss to coat.
  • Serve and enjoy!
  • Yields ~1½ cups Indian tomato and onion salad.
