This funfetti mug cake for one is easy, healthy, vegan and perfect to satisfy that sweet craving! It’s portion controlled, low/no sugar, gluten-free – and so good you won’t even believe it’s just over 100 calories!!
1 1/2 Tbsp Almond milk
1/2 tsp Baking powder
1/2 tsp Coconut oil
3 Tbsp Oat flour
1/8 tsp Salt
1 Tbsp Sweetener
1/4 tsp Vanilla extract
1 Tbsp Yogurt
Whisk dry ingredients together in a small bowl.
Whisk wet ingredients together in a microwave safe mug (8 oz or larger).
Gradually add dry to wet, whisking to combine (I use a fork to whisk).
Stir in sprinkles.
Microwave at 50% power for 2 ½ minutes (my microwave is 1000 watts so adjust accordingly)
Cool 2-3 minutes before eating. Enjoy!
