Funfetti Mug Cake

This funfetti mug cake for one is easy, healthy, vegan and perfect to satisfy that sweet craving! It’s portion controlled, low/no sugar, gluten-free – and so good you won’t even believe it’s just over 100 calories!!

Ingredients

  • 1 1/2 Tbsp Almond milk or milk of choice
  • 1/2 tsp Baking powder
  • 1/2 tsp Coconut oil
  • 3 Tbsp Oat flour
  • 1/8 tsp Salt
  • Sprinkles
  • 1 Tbsp Sweetener or sugar
  • 1/4 tsp Vanilla extract
  • 1 Tbsp Yogurt coconut milk yogurt for vegan
  • Procedure

  • Whisk dry ingredients together in a small bowl.
  • Whisk wet ingredients together in a microwave safe mug (8 oz or larger).
  • Gradually add dry to wet, whisking to combine (I use a fork to whisk).
  • Stir in sprinkles.
  • Microwave at 50% power for 2 ½ minutes (my microwave is 1000 watts so adjust accordingly)
  • Cool 2-3 minutes before eating. Enjoy!
