Veggie Soup

This soup is the perfect dish to include in your weekly meal prep – SO budget-friendly and LOADED with veggies! Blend less for a chunkier soup, or blend until nice and creamy if you prefer. This vegan soup is just 106 calories per serving, so feel free to come back for seconds!

Ingredients

  • 1 pound (LB) Chopped carrots
  • 1 pound (LB) Frozen cauliflower
  • 2 pounds (lbs) Frozen corn
  • 1 tsp Salt
  • 2 White potatoes
  • Procedure

  • Add all ingredients to a pot and cover with water. Bring to a boil.
  • Simmer until fork tender.
  • Drain salted water, but reserve it for blending.
  • Blend ingredients and slowly add a bit of water back in, until creamy as desired.
  • Season to taste with salt.
