This dish is SO simple and still full of flavor! If you’re not a fan of spicy food, you can seed your jalapeño so you get the zesty flavor but not the heat. You can freeze this dish for up to 3 months!
2 cans black beans (30 oz, drained & rinsed)
2 tsp cumin
2 garlic cloves minced
2 jalapeño seeded if preferred
1 Tbsp olive oil
1 cup onion diced
pepper to taste
salt to taste
Add oil to pan. Add onion and sauté until tender, for around 3 to 5 minutes.
Add garlic, jalapeño and cumin. Sauté 1 minute, until fragrant.
Add beans and stir until heated through, around 2 minutes or so. Season to taste!
Serve immediately, or save for later.
Can store in an air-tight container and freeze for up to 3 months! When ready to enjoy, transfer to the fridge to thaw the day before you’re going to eat it, then microwave for 3 to 4 minutes until heated through.
