The EASIEST broccoli soup ever, that’s loaded with healthy nutrients! An easy vegan recipe using only TWO main ingredients—broccoli and beans. Perfect for meal prep, because you can portion and freeze this soup!
4 cups broccoli florets
pepper (to taste)
salt (to taste)
water (enough to fill half of a large pot and cover broccoli)
1 can of white beans (15 ounces)
Add water, broccoli and salt to a pot. Boil until fork tender.
Transfer broccoli with slotted spoon to blender. Add white beans, salt, and pepper.
Reserve green water from boiling broccoli. Add enough water to blender to cover broccoli halfway.
Blend until smooth and creamy. Season to taste.
Enjoy, refrigerate or freeze.
Yields about 4 cups of soup.
