Ingredients

Halloween Vegetables

  • 2 cups white cauliflower florets
  • 3 cups orange baby carrots
  • 1 large orange bell pepper sliced
  • 1 cup mini orange tomatoes whole or halved
  • 2 cups yellow baby carrots
  • 1 large yellow bell pepper sliced
  • 1 cup mini yellow tomatoes whole or halved
  • 2 heads purple cauliflower cut into florets (~5-6 cups)
  • 1 cup purple baby carrots
  • 1 cup black olives

Dip Ideas

Instructions

  • On a large wood board (mine is 24x18 inches), use vegetables to build an outline of the candy corn shape, then fill it in.
  • Create a triangle near the top of the board using white cauliflower. (I also used some white baby carrots.)
  • Next, outline the orange middle layer using orange baby carrots & orange bell pepper slices.
  • Then outline the yellow bottom layer using yellow baby carrots & yellow bell pepper slices.
  • Fill each layer with the corresponding color of vegetables, using mini orange & yellow tomatoes to fill any gaps in those layers. Continue until your candy corn shape is as saturated as you’d like it.
  • Place 2 small serving bowls in the top corners of your snack board, as placeholders for your desired dips.
  • Finally, cover remaining space with purple cauliflower florets, purple baby carrots, and black olives, until the board is filled.
  • When ready to serve, fill the serving bowls with guacamole, hummus, or whatever dips you’d like.
