Chop carrots into sticks/wedges, whatever your desired fry shape is. Pat dry with paper towels. (The dryer they get, the crispier they’ll turn out!)
In a large bowl, toss carrot sticks in oil and seasonings to coat.
Place a wire baking rack on top of a lined sheet pan and spray with cooking spray. Arrange seasoned carrot sticks on baking rack. (Use 2 pans if needed! For crispiest results, cook just 1 pan in the oven at a time.)
Bake for 15-20 minutes, until browning and crisped as desired. If not using a baking rack, remove from oven and toss/flip halfway through.
Serve with sriracha mayo or your favorite dip and enjoy!
