Ingredients

  • 2 tsp avocado oil
  • ½ cup onion chopped
  • 8 oz sliced mushrooms rough chopped
  • 2 cloves garlic minced
  • 24 oz marinara sauce or pasta sauce of choice
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp salt
  • cups vegetable broth reduced sodium
  • 16 oz spaghetti noodles
  • 2 zucchinis sliced & quartered
  • 2 cups spinach

Optional Toppings

  • parmesan
  • fresh basil

Instructions

  • In a pot over medium heat, sauté onions, garlic, and mushrooms, in a bit of oil, 3-4 minutes.
  • Add sauce, dry herbs, salt, and broth. Bring to a boil.
  • Add spaghetti and zucchini. Reduce to a simmer and sit uncovered until the pasta is cooked through and liquid has reduced (8-12 minutes). Stir regularly to prevent pasta from sticking to the pot.
  • Stir in spinach cook until wilted, about 1-2 minutes.
  • Serve warm with parmesan and fresh basil if desired, and enjoy!
  • Store leftovers in an airtight container in the fridge for up to 7 days.
  • Yields ~10 cups one pot spaghetti.
