Savory, comforting pan seared tilapia with garlic snow peas - all conveniently cooked in the same skillet! A quick one-skillet dinner that's ready in under 30 minutes.
In a large, flat dish, combine almond flour, Parmesan cheese, and spices for tilapia coating. Press each tilapia filet in flour mixture to coat both sides, using hands as needed to get a nice even coating.
In a separate mixing bowl, toss snow peas with oil, garlic, salt, and pepper.
Heat a large skillet or pan over medium-high heat for 2-3 minutes and add cooking fat of choice (i.e. oil/ghee). Spread oil or ghee across the bottom of the pan to coat.
Add coated tilapia filets to one half of the pan and cook for about 3 minutes on each side, until golden brown.
On the other half of the pan, add seasoned snow peas and saute while the fish cooks.
Finish whole dish in the pan with lemon zest and juice, and sprinkle toasted almonds onto snow peas.
In a separate bowl, combine salsa ingredients and mix well to integrate.
Top crusted tilapia with mango salsa, serve on a plate with cooked snow peas, and enjoy!
