1 can chickpeas (15 oz) drained and rinsed 1 tsp olive oil or sesame oil 1 Tbsp low-sodium soy sauce or tamari ½ tsp garlic powder ½ tsp ground ginger ¼ tsp chili flakes optional ½ tsp maple syrup optional
Preheat oven to 400°F (200°C). Pat chickpeas very dry with paper towels.
Whisk oil, soy sauce, garlic powder, ginger, chili flakes, and maple syrup (if using).
Toss chickpeas in seasoning until evenly coated.
Spread on parchment-lined baking sheet and roast 30–35 minutes, shaking pan halfway through.
Cool completely before serving or storing.
