Ingredients

  • 1 can chickpeas (15 oz) drained and rinsed
  • 1 tsp olive oil or sesame oil
  • 1 Tbsp low-sodium soy sauce or tamari
  • ½ tsp garlic powder
  • ½ tsp ground ginger
  • ¼ tsp chili flakes optional
  • ½ tsp maple syrup optional

Instructions

  • Preheat oven to 400°F (200°C). Pat chickpeas very dry with paper towels.
  • Whisk oil, soy sauce, garlic powder, ginger, chili flakes, and maple syrup (if using).
  • Toss chickpeas in seasoning until evenly coated.
  • Spread on parchment-lined baking sheet and roast 30–35 minutes, shaking pan halfway through.
  • Cool completely before serving or storing.
