Simple, flavorful BBQ pork tacos made with slow cooker pulled pork and a refreshing bean & corn salsa.

BBQ Pork Tacos
- 2-3 lbs pulled pork below
- 18-24 small white corn tortillas
- 1-2 cups shredded lettuce
- 2-3 cups bean & corn salsa below
- ½-1 cup chopped cilantro for topping
BBQ Pulled Pork
- 4-5 lbs bone-in pork butt yields ~2-3 lbs pulled meat
- 1 Tbsp salt to taste
- ½ tsp pepper to taste
- 1-2 cups BBQ sauce for serving
Bean & Corn Salsa
- 1 15-oz can black beans drained & rinsed
- 1 15-oz can garbanzo beans drained & rinsed
- 1 can 15-oz can corn drained & rinsed
- 1 14-oz can diced tomatoes
- ½ cup onion 1 lime juiced
- 1 lemon juiced
- ½ tsp cumin
- ¼ cup cilantro
- ½ tsp chili powder
- salt & pepper to taste
To Cook BBQ Pulled Pork:
Rub pork butt with salt and pepper, to taste.
Cook in slow cooker on low heat for 9 hours. (Or high heat for 4-5 hours.) Once finished, remove from slow cooker and shred meat with 2 forks.
Toss shredded meat in BBQ sauce, to taste.
To Assemble Tacos:
Toss together bean salad ingredients.
Assemble tacos with corn tortillas, shredded lettuce, BBQ pulled pork, and bean salsa. Garnish with cilantro and enjoy!
Optional: serve in taco stand for fun presentation flair! Yields 18-24 tacos or 6-8 servings (3 tacos per serving)—depending on size of pork butt.
