Ingredients

Microwave Omelette Base Mixture

  • cooking spray
  • 2 eggs
  • 2 Tbsp water
  • salt
  • pepper
  • 1-2 Tbsp shredded cheese optional

Optional Fillings/Toppings

  • 2 Tbsp shredded cheese
  • 2 Tbsp pico de gallo
  • 1 Tbsp salsa
  • whichever fillings & toppings you like!

Instructions

  • In a measuring cup, whisk together eggs, water, salt, and pepper.
  • Spray cooking spray to coat a microwave-safe plate. (I recommend using a plate with a bit of a lip around the edge!)
  • Pour egg mixture onto prepared plate.
  • Cover plate with plastic wrap, sealing around the edges. Cook omelette in microwave on high power for 2 minutes. (It WILL floof up in the microwave, but that’s okay—just let it be!)
  • Carefully remove plate from microwave, remove plastic wrap, and allow to cool for about 2-3 minutes.
  • Add cheese and fillings of choice before folding over and adding desired toppings.
  • Serve and enjoy with greens, salsa, or anything else you'd like!
  • Yields 1 microwave omelette.
