In a measuring cup, whisk together eggs, water, salt, and pepper.
Spray cooking spray to coat a microwave-safe plate. (I recommend using a plate with a bit of a lip around the edge!)
Pour egg mixture onto prepared plate.
Cover plate with plastic wrap, sealing around the edges. Cook omelette in microwave on high power for 2 minutes. (It WILL floof up in the microwave, but that’s okay—just let it be!)
Carefully remove plate from microwave, remove plastic wrap, and allow to cool for about 2-3 minutes.
Add cheese and fillings of choice before folding over and adding desired toppings.
Serve and enjoy with greens, salsa, or anything else you'd like!
Yields 1 microwave omelette.
