Salad
- 1.5 cup chickpeas canned
- 1 cup cherry tomatoes halved
- 1 cup mini bell peppers diced
- 1/2 cup Kalamata olives pitted and sliced
- 1 cup zucchini sliced
- 1/2 cup red onion sliced
- 1/2 cup feta cheese crumbled
- 1/2 cup fresh parsley chopped
Dressing
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1/2 lemon juiced
- 1/2 tsp oregano
- 1/2 tsp salt
- 1 dash pepper
Combine all salad ingredients in a large bowl.
Whisk together dressing ingredients until blended.
Pour dressing over salad and mix to coat evenly.
Store in mason jars or airtight containers for meal prep or enjoy immediately!
