Salad

  • 1.5 cup chickpeas canned
  • 1 cup cherry tomatoes halved
  • 1 cup mini bell peppers diced
  • 1/2 cup Kalamata olives pitted and sliced
  • 1 cup zucchini sliced
  • 1/2 cup red onion sliced
  • 1/2 cup feta cheese crumbled
  • 1/2 cup fresh parsley chopped

Dressing

  • 3 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1/2 lemon juiced
  • 1/2 tsp oregano
  • 1/2 tsp salt
  • 1 dash pepper

Instructions

  • Combine all salad ingredients in a large bowl.
  • Whisk together dressing ingredients until blended.
  • Pour dressing over salad and mix to coat evenly.
