Arrange slices of bread on work surface (as many slices as your desired number of freezer sandwiches).
Layer on sandwich fillings assembly-line style!
Start with your spreads—I used pesto on some of my sandwiches and mustard for the others, but you could also use hummus or another freezer-friendly sandwich spread.
Next, add a few slices of deli meat of choice on top, followed by sliced tomato*, sliced cheese, and top bread slice. (*Omit tomato if you DO NOT plan to grill/panini press your sandwiches before freezing!)
To grill/press sandwiches before freezing, preheat panini press. Add assembled sandwiches and grill as desired. Allow grilled sandwiches to cool before packaging and storing. If you DO NOT want to grill your freezer sandwiches before freezing, package and store as-is. (You can always grill them later!)
Store in packaging of choice. Option #1: Store each sandwich individually in its own freezer-safe zip-top bag, reusable silicone bags, airtight storage container, or reusable beeswax wraps. Option #2: Wrap individual sandwiches with plastic/foil before storing together in a large freezer-safe bag, original bread loaf bag, or airtight storage container.
Refrigerate for 2-3 days, or freeze for up to 2-3 months.
When ready to eat, thaw out freezer sandwich overnight in the fridge. Reheat in the toaster oven, toast on the stove top, grill on a panini press, or enjoy cold!
